Faye Vids right or wrong if you like the taste that way then so be it! That’s your own version of it. My mother makes it a totally different way aswell but my siblings and I like to tweak it to our liking. So don’t be discouraged from continuing making more dishes as long as it tastes good is all that matters. And your welcome 👌

When I was a student nurse at Auckland hosp 1975-1979 that was my favourite food. A lot of Cook Island ladies were working in the kitchen and they used to make it all the time.

It was back in the 70’s when I first tasted Cook Island Pink Potato salad. As they call it, Mainus/Mayonnaise Credit to the Cook Islanders for sharing their yummy Mainus with us 💕💕💕

I take my hat off to you for your take on this loved dish. An authentic Cook Island Maineti/Minus/Mainese does not have best foods as part of the ingredients. The homemade dressing is mixed through the potatoe mix and the remainder used to dress the top. Every Cook Island family has their own take on this well loved dish and me personally, I still use my grandmothers recipe. Again, pokarakara for your recipe and method.

The easy and fastest way to peel of the egg shell is use a tea spoon crack the top and let the spoon slide through the egg shell then they'll come off easily👍👍

Yummy thanks for the recipe. A splash of brown vinegar in the water with your eggs when boiling helps for easy peeling.

Kia orana koe e te taeake!!!You are doing fantastic..sorry to say this I dont follow our old tradition anymore .. i add any greens for healthy flavor Instead of beetroot or mix vegts as both are refined foods from the tin or bagged, I put grated carrots, chopped purple onion, spring onion, green or red or yellow capsicums with potatoes... or any greens from your garden.. because it will be eaten on the day. Im looking at the healthy way... When I get my cook island family members or visitors then the real deal is on..No short cut from me...Its always eaten with chop-soy, roast chicken or meat if u like..But I preferred chicken.. Poke is a plus but its too much rich food on the day... I am a healthy eater... Other than that, be proud of your achievement....Kia manuia

Saw a video on life hacks for peeling eggs, now it’s the only way we peel them at home. If you have any small glass jars laying around, put the boiled egg in the jar, put the lid on, give the jar a shake and watch as the shell cracks and starts to peel itself away. Take the lid off, turn the egg out into your hand and gently remove any excess shell. It should come away smoothly. Run under cold water if you need to.. it’s really handy when you’re peeling and shredding a dozen eggs for a big feed 😅 it’s interesting to me you don’t use your home made mayonnaise through the potato salad, it looked amazing, and gives more richness than the Best Foods. I’m with you on the darker/pinker more beetroot-y mix though! Going to have to get my Mumma to make some 😆😆 Thank You for the vid!

Boil eggs n when ready hot water out n cold water in n it will peel it easier. Roll the eggs on board etc will make it eadier to peel.💞

Choice one Faye believe it or not, this is the only Kuki food I can make with my eyes closed seriously and because im the bomb most family functions everyone expects me and only me to make and bring the mainus OOPS sorry Faye but best food is a NO NO my tupunas would go mental and makutu me😂😂😂 ..I only make the traditional egg yolk mayo for mixing and topping and I like extra beetroot too. ..well done Faye awesome👍

Hi Dalmeny, lol I added Best foods mayo cos of my kids (fussy brats) lol I believe that you must make an awesome Mainus. That’s why it’s always sort after from your family at your guys get togethers. Salade russe is not exactly the same dish as Mainese. We didn't have any Russian people visit the Cook Island prior to having been governed by NZ. Also Salade Russe is not pink and it does not have most ingredients that our Mainese has. Also Salade Russe doesn't use lettuce as a base to hold the salad. Just thought I'd make it clear before people get confused 🤣🤣

The main thing is getting the dressing right, the rest of what you put on it is not as important. Some people cheat and use best foods but it never tastes the same. The best mainaise, the dressing is always made it from scratch as you've done here. Good on you!
