These roasted fish tostadas have been my most cooked, low maintenance meal of the summer. Adapted from one of my favorite new cookbooks, Cook This Book, by Molly Baz. It's easy, light, satisfying and full of bright pops of flavors: citrus, fresh cucumber, heat from fresh chilies and lots of herbs.
We're still in the thick of hot, humid summer weather here. I love that I only need to turn my oven on to 300 F and only for 12-15 minutes. That's the only cooking involved in this recipe! Everything else is just chopping and prep work. Dinner in less than 30 minutes and very healthy to boot. Who wouldn't want that?
