Let's cook with Siskin Hospital's executive chef, Maxwell DeRussy! Today's recipe is chickpeas with a roasted garlic tomato sauce over rice. A perfect dish to add to your rotation and is vegan friendly!
Prep time: 10-15 minutes | Cook time: 20-30 minutes
Recipe:
▪️ 2 eggplants - peeled & diced
▪️ Shitake mushrooms - sliced
▪️ Roma tomatoes - diced
▪️ Fresh garlic
▪️ Canned tomatoes
▪️ 1/2 yellow onion
▪️ Marsala cooking wine
▪️ Olive oil
▪️ Basmati rice
▪️ Pita bread
▪️ Seasonings- salt, pepper, basil, oregano
