As a vegan I'm using coconut milk all the time. I have a ranch dressing recipe that's a family favorite. You have to be a little more creative when cooking vegan because your ingredient list is limited...lol. Thanks for sharing some delicious looking recipes with us Lauren:)

I do a yummy dessert with coconut that’s so simple. Mix 300gr of coconut with one can of condensed milk and pour it on a Graham cracker pie crust. Bake for 20/30 minutes or until golden. Take it out of the oven. Melt some chocolate with 3 Tbsp of peanut butter in the microwave. Pour it on top of the pie and put it in the fridge until the chocolate hardens. And voila! Done

I just use 1 can of coconut milk, add 1 cup of rice, boil and cook like normal. Once its done, add a little butter, cilantro and fresh lime zest! 💕
