Someone pointed out that the recipe calls for apple cider not apple cider vinegar, which makes a whole lot of sense. Please ignore my point about the apple tart being too vinegary that was definitely my mistake! Edit: I decided to remove the portion over the vinegar, I wanted to keep it in for my Texas joke but it's a bit misleading. I don't want people to think they should be using apple cider vinegar or that my mistake caused my score to be different. I took into consideration that I did probably mess up when making the apple tart for my score, so figuring out my mistake will not change the score.

Glad that you mentioned the water part!! I was making one of her recipes and if I didnt go through the instructions multiple times, I would have missed adding water.

Either The Professional Pastry Chef: Fundamentals of Baking and Pastry by Bo Friberg or Baking and Pastry: Mastering the Art and Craft by The Culinary Institute of America. The CIA book is what every pastry chef in America has read. You’ll learn a lot but it’s a hard book to recommend because the price and the recipes are for restaurants/industrial settings.

When people say my fave recipe in the book, be skeptic. It takes a very long time to cook every recipe in the book. You can’t finish a cookbook in a few months, unless you are running a pro kitchen with lots of ingredients to use
