Theresa T I make vanilla ice cream with a cup of cashews and a coconut milk can. That would be a good replacement but you'll need to add a sweetener as bananas 🍌 provide that here

Sigh😦😧 okay. I attempted this method. Mine end results neva kum out rite xcept on the fluffy pancakes. My cookie dough wuz more on the dry sandy side far as texture and i only had enough for 1 layer not 2. The nice cream always come out good. I stil njoyed it but the dough cudv came out better.

Different brands of coconut flour can change the consistency of the cookie as can the moisture content of the dates you use for the paste, so next time just add more date paste or even non-dairy milk until you have a dough that is moist like in the video. I'm glad it still tasted okay!

Hmm mango has the right texture to work as well, but won't taste very good with the cookie dough. I can't really think of any good subs, although you could just use vegan ice cream for the middle layer instead of this banana mixture :)
