Mine took about 50 mins in the oven to come out in the right consistancy. When I stopped at 35m as the recipe said, it was just too soft and raw looking (as did many others who commented) rather than a blondie consistency. So I put it back in the over for another 15-20m and after let it cool, it was just right! Gooey and delicious! Thanks for the recipe!

Can I add any sweetener to the frosting to make it sweeter? It’s for a child’s birthday and I don’t want her to feel like the frosting isn’t sweet enough. She only just went gluten/dairy free and lower sugar so her standards might be high…😅

Totally understand! Coconut whipped cream is kind of finicky, and adding sweetener can make it too thin very easily, so I would be careful with that. My best recommendation will be to go with a more traditional buttercream (still gluten and dairy free!) frosting if you want a sweeter option instead of like this: feastingonfruit.com/small-batch-chocolate-layer-cake/

I have been searching for a vegan frosting/whipped cream and I was skeptical about your recipe because like most others it calls for cashews, BUT I was so impressed with how it came out. I think the secret is in the freeze-dried fruit. My store didn't carry the raspberries, so I tried the blueberries and I was not able to taste the cashews at all, but the cashews did give it a creamy texture. I am not vegan but I'm trying to make more plant-based recipes and I will definitely use this recipe going forward...I will try your cupcakes next. Thank you!! My store carries several flavors of the freeze-dried fruit, including mango and pineapple, so I look forward to mixing it up.

you can stir them into chunks in the base instead of putting them on top, but I do not recommend blending them into the ice cream mixture since they have a lot of water that will make the ice cream icy instead of smooth and creamy

I would not recommend using a tart with no bottom since you build this dessert upside down, there’s no way to keep the apples in or flip it out that I can imagine…

Does this work if you grind your rolled oats? I have done that before for something else, seemed to work, but it was nowhere near as fine as your oat flour.

Sure, but you'd need it to be a higher fat ratio. Typical milk is 1 cup nut/coconut to 4 cups water, for this I'd recommend doing 1:2. Hopefully that makes sense!

You need the tapioca for binding, they will be too crumbly without. You can use cornstarch or arrowroot instead though!
