Yes, im late to the party, but thats how I Roll. I saw, I made, they loved....it. Thank you sam. I can not say enough about your cookies/ cooking. The time that goes into each recipe/video is truely a labor of love. I made the filling the night before and froze it over night. I have no patience to wait hours, as well. Bad enough I had to let the cookie cool before I could eat it. But it was so Worth the wait. Ty so much for the time you put into these videos. If you guys want to know is the Cookie worth making...... Yes over and over again Yes. I have tried 3 different recipes. A cake, salmon and chocolate truffles all amazing. Keep them coming sam. Hi Sam, I can't wait to try these! My oven usually takes a bit longer to bake cookies than recipes say, so I usually temp them with an instant read to make sure they are fully cooked. What would be a target temperature for them to reach in the center before taking them out, do you know?

I’ve never seen brown waxed paper like that before except in your videos. Is there some advantage to it over the white waxed paper that’s been around since the dinosaurs? Also, do you prefer waxed paper over reusable silicone mats, if so why or are you just using it because that’s what most people have in their kitchens. Thanks! Have a great weekend!!!

I use it because I can get it in bulk from the same place I buy my parchment paper. There's really no other benefit that I know of.

I am not sure how that will work. You are going to be bringing in more moisture and would likely need alterations to the recipe. Without having done it myself I can't say for sure what would need to be done. :(

Oh, Sam, so sad. I attempted to make these cookies. I checked, and rechecked the ingredients, and amounts. As I combined the wet/dry, I realized the dough was super dry. So dry, I needed my husband's help to mix it. I ended up adding small amounts of half and half in order to get the dough to come together. I attempted to place the cream cheese mixture inside the dough. It was a mess. I ended up making smaller cookies, sans the cream cheese, just to not have a total failure. I am NOT blaming you by any means, I just cannot figure out what I did wrong 😢.

Oh no! I'm so sorry to hear this! Do you happen to weigh your ingredients? The cause of this is a lot of the times excess flour. :( I hope you were still able to enjoy them. I know how frustrating it can be to do all of that work and not have anything to show for it. :(
