I used to fix possum exactly like I did Rabbits. Boil them untill tender,,,, pouring off all that ole nasty fat water. Take him out and roll him in flower than brown him off,,, just like a rabbit. Really good meat.

Thank you for this recipe. We have opossums that live in our bird pen. They eat more than the birds and welcome. To all those with nothing but nasty to say, didn't anyone teach you manners? "If you have nothing nice to say, say nothing at all." My thought is, when you're hungry and there are no grocery stores to raid, perhaps you will change your minds. This stew looks scrumptious and I don't care whether the meat is chicken, pork, beef, venison, squirrel or opossum. I will cook it up to feed my family.

Hell, on R&R in Thialand from 'Nam, I could not read the menu and asked the Thai waitress to order something delicious. I was served a green soup that I tasted and it was delicious. I then dipped my spoon deep and came up with a chicken foot. I called the waitress back to complain and she nodded yes. In English, the dish was Chicken Foot Soup which was a delicacy to them. To each his own. It was damned good, I must admit!

One of the best meals I ever had was possum. It was in the West Indies where it also lives. The main difference from this recipe is that possum was traditionally cooked skin on. They built a fire of dry grass which singed all the hair off without cooking the meat. Possum is like pork because so much flavor and fat is in and just below the skin!

My grandmother's recipe: Clean 'possum thoroughly, season well, rub with cooking oil and put upon a pine board back down. Put into 200 degree oven for 7 hours, basting with juices every 30 min. When done, remove from oven, throw the 'possum in the trash and eat the board.

I work with a 91 year old black woman and today she told me how much she liked possum. Before this I had only considered it to be a joke. I didn't think people really ate possum but guess what they do. I guess it may have started back in slave days and I guess that explanation makes sense. It kinda makes me feel more for the old woman if she had had to eat possum when times were lean. Mostly I just see people JOKING about eating possum. I used to catch them all the time in live traps when they were eating my cat's food outside. The damned things STINK to high heaven. I can't imagine how people would decide to eat such a disgusting animal. But if it isn't going to make you sick then I guess protein is protein.

Poor people ate possum. My father caught them in traps that he made himself and would set for rabbits and then he would keep them in a pen and feed them until they didn't stink. And it got the gamey taste out of them

Several years ago That was a treat to have possum!! And also they were famous for killing our chickens!! So both problems were solved at one time you ate and you saved the chickens But mostly we caught them and fed them for a while before eating them!

They are a very clean animal, actually, much cleaner than chicken, and pigs. Did you see how they're raised? I saw them in my yard every night from my security cameras. I don't eat them (because am lazy to clean and cook, that's all). Someday when retired and have more time I will try. Squirrels and possums and raccoon eats fruits from my trees every day/NIGHT, all the times. Very clean animal and clean meat. Meat must be very good.

I would say it was quite disappointing even though the video itself was interesting and the food look great but you didn’t go from step to step on how to cut the meat off a possum and how to start cooking it from the beginning and from the time you put the bacon onions and potatoes in didn’t really teach anybody I’m really how to cook it from start to finish
