Leipäjuusto is a mildly toasted and salted rennet cheese. No sour milk or eggs are involved , just a little bit salt, rennet and milk. Munajuusto is a different thing, but it is good also. Great job :)

Listen, I've randomly mixed leipäjuusto and juustoleipä all my life! I THINK I'm saying the right one then just accidentally say the other. It happens. I've never seen or heard of this munajuusto, my karelian grandmother never made anything like this. Just looking at what goes into it, I'm sure it's nice to eat though. You should try and make pannari sometime. It's so simple it's almost impossible to get it wrong. Not to doubt your cooking skills, but less pressure!

5:22 Good rule of thumb here is that the first word is the descriptor so juustoleipä = cheesy bread (toast with cheese) and then leipäjuusto = bread cheese. Was going to scroll down and comment nice kitchen in the first few seconds before you said it wasn't yours 😅

I'm quite impressed with the results. I thought this might not work such thick version of sour milk. I think the closer equivalent to sour milk (piimä) mentioned in some recipes would be kefir. But it seems some recipes add kermaviili which is (as you know) a version of creme fraiche. I think I want to try this too.

You could try making Karjalanpiirakka and Lihapiirakka. Choose a preferred recipe, there are as many as there grandmas in Finland.

Well done. It certainly was a good protein filled dinner for ya. I might be wrong though , but I think it should be asking for buttermilk instead of sour cream. Or maybe it's just made differently in different parts of Finland. Anyways great video as always. I may have to try this myself , haven't been able to get any Finnish dishes in the longest time , and with all this going on it seems like I won't be able to go back to Finland anytime soon. It's been years since I've been back home.

Since you made a cooking video and since it is Easter, (pääsiäinen), time, I suggest you watch a crazy 2 minute video from an old Finnish TV comedy series. Search for the video "Pääsiäishanukas" on YT. Posted by Nikke Knatterton. That is the original version, the other one is a remake, not as good. Pääsiäishanukas a is traditional Finnish Easter delicacy! 😜 (Warning: The video contains male nudity. No big deal for us Finns.) They also give the recipe for pääsiäishanukas. You might want to try making pääsiäishanukas yourself? ( I guess I should have sent my comment yesterday when it was April fools day.) In finnish Lapland juustoleipä is called kahvijuusto, coffee cheese, because they have the habbit of tearing! pieces of the cheese, put them in a coffee cup, and pour coffee on them. Adding cream and sugar to everyones own taste. You must not cut the cheese with a knife! When you tear it there is more surfice so that the cheese can suck more coffee in. If you replace kahvijuusto with pulla, sweet roll, you get pullamössö - smashed pulla. That was my favorite as a kid. My family is originally from Southern Lapland, so I spent about a month there every summer when I was a kid. My mother never bought kahvijuusto from a grocery store, but always from a local woman who made kahvijuusto. Other specialties from Lapland are rieska, bread made of barley, and kampanisu, made of butterdough, the same dough you use when you make joulutorttu, the star shaped torttu with plum marmelade in the middle. Kampanisu got it's name from it's shape, it looks a little like a comb. I used to call it varvastorttu, because it looks like 5, (or 4) toes. Varvas = a toe. Greetings, hope you are doing fine!

It is impressing to me that you do videos on subjects you're not 100% confident in, like cooking. That shows some real strength of character, being able to show an imperfect side like that. Makes you feel like genuine human when everything isn't super edited to perfection.
