Cooking and preserving food at home is a great way to save money. Today is the third video of the Three Rivers Pantry Challenge 2025. We are eating from the pantry and freezers, and we are also preserving some items from the summer harvest to get the freezer cleaned out.

I love buckwheat!! You don’t even need rice cooker to cook them up. You only need to pour boiling water over them and let it sit for 10 minutes and it’s ready to eat. My favourite meal with them is when you fry onion in the pan then put ready buckwheat with the onions and shred generous amount of cheese over the top. mix throughout until cheese melts the best breakfast/lunch meal to have.

Oh, I am going to try this it sounds great. I would love it with cabbage fried in to the onions as well.

Brenda here, Would love to hear about the almond flour Dutch Babies. I have made Dutch Babies with regular flour but we now try to eat gluten free. We do use almond flour though.

Hi Stephanie. Love this pantry challenge. I am always wanting to do it but I can never really stick with it. It is so hard to work a crazy full time job and do a pantry challenge. Some nights when I get off. I am so tired. 😊

It is tough for sure. Iam finding this year a bit more challenging with our diet changes. It is harder to stick to pantry items rather then fresh produce.

Girl, rice can last up to 30 years if stored correctly. Put it in a glass jar with a seal tight lid, and you are good to go! Now, if the rice has a lot of oil, it won't last that long. Also, wash that rice before you cook it to remove some of the starch.

I was glad to see I am not the only one with canned "stragglers" lol. Made a corned beef from the bottom of the freezer and some canned sauerkraut from.... 2020🫣🫣🫣. Waste not.... LOVE your videos! I wish I could drink the smoothies but I am too cold this time of year!

I have found I can not eat potatoes, beans, corn, rice or any grain. After testing they raise my blood sugar too much. Last night we had sauted cabbage and crispy bacon.

I have to be very careful with those items as well. Although the potatoes and beans reheated and, of course, portion controlled, come back with decent tests. Still in pre-diabetic levels, but only just, so I allow them on occasion.

Could you grind buckwheat into flour? Would that be benificial for your blood sugar?

It's definitely worth trying it. We are still in the experimental part and it is fun to test different things out. Perhaps we will be trying to grow it this year.

So will you grow buckwheat in the future? I know it's easier than wheat in cold climate and is a great pollinator plant. But I don't know if it worth the price.

Ontario seed co. Has bags of buckwheat grows well on sand and cooler weather.
