I have discovered that I love delicata squash. Super easy to grow. You don't have to peal the skin off. Cube it. Season it. Roast it. Delicious.

Yes, I think you’re right! I got confused by the recipe instruction for fresh zucchini and drained the frozen amount when I should have left the water in. I’m sure that’s what I normally do 🤦♀️ it still tastes fine but a bit dry.

Go for it Jessica, I am going to go for February as well, not sure if I told you, however I have allotted ourselves $25 a week for perishables, including milk eggs and fruit. We did not stock up prior to the 3rivers challenge, we actually started before New Years and I said we are going to pretend that we have been storm stayed in!! We have been very intensional and have only spent $24 since before New Years. We are participating in the challenge, not just for saving, but for checking our pantry and rotating through. Keep up the great work, we don’t make videos however I am keeping a log and tracking meals and baking and purchases. I am also participating in the 2025 ditch the grocery store challenge, and everything is going amazing. Thank you for all that you do. Ok you have me surprised saying you don’t like butternut squash!!!! I cut and dice mine and leave the skin on and toss it in oil and curry, and my sister in law who didn’t like squash always asks me to make it. TRY IT!!

I have the rice krispie recipe memorized 3 tbs butter 6 cups of rice krispies and 10 ounces of marshmallows I make this 2 times a week for my kids i use a little spray oil on my hands and mash into my pan I make mine in an 8 × 8 pan. Great pantry meals! And yes another month please!

We have been doing this since January and I have to say it's been a eye opener. I used to shop for meats weekly just to be ahead and grab sales alot. So I will begin that again in March because that's how much meat I have and I spent 264. On all. Crazy but true and portions for my need. So good luck we ALL NEED THIS

Definitely do another month of pantry challenge!!! We use tomato soup in beef stew. Not sure if you have another can, but you did find some stewing beef! The ramen noodles are perfect for a pork low mein stir-fry. Could even use some of your chili sauce on top, or add some directly into the stir-fry. To use up some of your squash and more of your whole wheat flour, maybe make some pumpkin loaves or muffins. Or maybe make a pumpkin pie or some pumpkin tarts! The best way to eat squash is in something sweet!

The next time you order seeds for sprouts, I highly recommend sunflower and green peas. We grow ours in an inch or two of soil and just clip them off as needed once they have a set or two of leaves, but I think they can also be grown like regular sprouts. The shells from the sunflower seeds would probably be a real pain to deal with, though. They don't have the bitter flavor of alfalfa sprouts. I'm also quite fond of radish and broccoli sprouts.

I agree! I had to quickly replace some of what was lost in the freezer melt down or I just wouldn't feel safe...to me food security is VERY comforting! That and enough firewood for the winter and I'm good to go :D

I would love to see another month or two 😉of a no spend or extreme low spend challenge. You always so many great ideas you find on the internet or have suggestions from viewers. Trying to use up the squash - what about a southern US style sweet potato casserole except with squash. IDK if you would like it because it is basically only the main ingredient but might be something to use it up. Either that or a pumpkin pie style pie with squash for Mr. W for work desserts or evening snacks.

I have made butternut squash gratin before. Just basically squash laid out with garlic butter poured over the top then breadcrumbs with more garlic butter poured over the op and grated Parmesan on top. So yummy!

I do leave the liquid from frozen zucchini for baked goods. I figure it was part of the zucchini to start with, so it should go in the mix. I’ve also been doing a pantry challenge, though I have spent $56 in January on milk and produce for our family of 7. I’m going to keep going through February. I’d love to see you keep going. Maybe give yourself a small budget for one shop at the beginning of the month to get the items that will help you use up the things that need used.

Maybe use the ground lentils as a sauce…for pasta or pizza. Bbq pork pizza? Great ideas for this video. Another month is fine with me. Cheap meals that use what I have is just what I need. I also used some frozen mashed potatoes I had in the freezer for dinner tonight. Made cabbage rolls I had already made in the freezer. I couldn't do the true pantry challenge this year. Not enough spoons this year. (Spoony here, if you know you know) But I did do a low spend. Only spent $30 for some dairy, bread, and produce this month. Last year I did do Jan and Feb and only purchased milk.

I think you should have left the zucchini liquid and you should add the mix ins with the flour so you dont over mix and create more gluten than you want. That is probably why the bread turned out a bit dense.

I can't think of anyone else in Canada that I would recommend but I'll think about it and share anything that I find that's good! I do spend a lot of time googling ingredients that I have and sorting through recipes that have several things that I want to use up! I LOVE trying new recipes so I'm open to finding new ideas! I also get a TON of suggestions from viewers like YOU to try meal ideas that I never would have thought of! I love your thoughtful questions and I'm so happy that you are enjoying the channel!

I can see this isn't a popular opinion. I would love to see you do another month of using up things that need to be used BUT I feel like we all need to have a stocked pantry of essential staples especially since tariffs could be coming and prices for certain things could go up substantially. I don't want to fear monger at all but not stocking up when things might be cheaper is not going to save money in the long run.

Haha! It's true...I could easily do another month and then start focusing on growing and canning more this year and watching the sales! I do agree with you that the tariffs are going to cause chaos on both sides of the border with the grocery prices and it is wise to be planning ahead! A stocked pantry is VERY important and probably MORE important these days with so many things affecting grocery prices :(

I made a blended pumpkin-coconut soup w grilled cheese sandwiches for a pantry meal last week, when we had our unexpected snow 😂Maybe an idea for some of your cubed squash??
