I loved everything about this Angolan Chicken Stew: Muamba de Galinha. Red in colour because of the Red Palm Oil, it also features Okra, chicken thighs and vegetables and spices.

Ingredients (5-6 servings)
3 - 3 1/2 pound chicken cut in pieces
marinade:
Juice ½ lemon optional
1 teaspoon white pepper
1 teaspoon minced garlic
½ teaspoon dried thyme
1 teaspoon salt
½ teaspoon smoked paprika
½ teaspoon chicken bouillon powder
1/4 cup canola oil
1/2 cup palm oil
4-5 garlic minced
2-3 onions sliced
2 tomatoes diced
1 teaspoon white pepper
1 teaspoon smoked paprika
Whole hot pepper pierced chili, Scotch bonnet
½ -1 pound butternut squash cut into large cubes
18-20 Okra sliced in half
2 cups or more chicken broth or water
Salt to taste

From Cameroon here. Palm oil was sustainable when we used it only for cooking (it's like olive oil. How much can you plant for home food consumption really). It's every other use that has come to destroy the environment: soaps, packaged foods etc. The red oil means it's not been overly processed and is more than likely from a local non intensive operation. I appreciate you making the effort.

Thank you for this information. Every time I see a recipe using Palm Oil, I have wondered about this. Is the red palm oil the only kind used for cooking?

@@cydkriletich6538 The red palm oil is less refined and therefore has more flavour. If you were going to cook with refined palm oil, you may as well use a different kind like sunflower, vegetable, etc. as it will impart very little flavour to the dish.

That shows how much you know, is nice to try but that's not how you make Muamba. And if he's agains palm oil, why didn't he go for muamba de Ginguba?

Hi, Jamie! There is a bit of a difference between white and black pepper, though for the amount needed in this recipe, I doubt it made a difference. White pepper is milder than black pepper, which tends to have a little bit of a “bite” to its heat. White pepper also has a citrusy taste to it. White pepper is often used more for its color than its flavor, in that if a dish is a light colored dish and you don’t want little black specks showing, you would likely choose white pepper. I actually only recently learned this myself watching one of the televised cooking shows I frequently watch.

The fact that we mostly use palm oil here in Malaysia, and we are one of the biggest palm oil source...and yes our forest are destroyed indeed...i wish i can do more...im learning a lot about it, maybe one day...

Jaime and all my fellow anti-anti-s , I enjoy piquant food and over the years I had to find a way to not offend the folks who don't enjoy very spicey food and yet satisfy my fellow chili-heads. My solution was to cook the chilies in the dish totally intact. no chopping no piercing no nothing. and removing them when soft (but not burst open) and chopping them up to serve seperately. the main dish has no piquancy that way (but a touch of the pepper flavor) and those who want spicey can add chopped chili to their heart's content. Congratulations Jamie on trying boiled okra. 👏 I'm a southern girl and love okra prepared in every way. At home, if it isn't boiled too vigorously to break the pod it won't become slimy. Fried is delish.

Thanks for the effort and specially for promoting one of our main dish. However, it caught my attention because we never add butternut squash to this kind of dish. We'd add some type of green leaf as callaloo, spinach to the sauce, collard green or cabbage as a side dish. We never fry the chicken on palm oil but we'd fry the tomatoes, garlic and onion and we don't use paprika as spice. All other ingredients are pretty much accurate. Anyway, thanks for the effort. We Angolans love our "Moamba de galinha" com funge. 🎉

Palm oil is widely used across African dishes, as Angolan I would give you 5 out of 10, 5 for good attempt. Why don’t you try calulu de peixe very healthy and easy to make :4 thick fillets of corvina fish (or other type of fresh and thick fish) 4 fillets of dried croaker fish (can be another type of fish) 300 g of okra 2 eggplants 1 medium onion chopped 3 cloves of garlic 1 bay leaf 2 packages of spinach 1/2 dl of palm oil 1 medium tomato Scale the 4 slices of fresh fish and also of dried fish. Crush the 3 cloves of garlic and season the whole fish. You don't need to let it rest. Remove the ends of the okra. Peel the eggplants and cut them into squares and place both in a bowl of water. Remove the skin from the onion and grate it. Do the same with the tomato. Wash the spinach with plenty of water and reserve it as you did with the other ingredients until the fish is ready. In a wide pan, start by placing a part of the grated onion, a part of the chopped tomato, the fish steaks (fresh and dried), the spinach, the bay leaf, the squared eggplant, the rest of the onion, the tomato and top the palm oil. Place over medium heat so that all the ingredients cook slowly. Do not add water as the ingredients used already contain a lot of water. After 30 minutes add the okra. Let it cook for about 40 minutes, always taking care that the fish does not fall apart. You should thicken the calulu sauce with corn flour or manioc flour. Dissolve a tablespoon of flour (from the indicated ones) in water and mix it with the stew. Leave it on the fire for another 2 minutes. Remove from the pan. Good luck 🥰

This was a strange moamba recipe. And the way you put it together was also odd. For example, never ever put garlic before onions! You will burn the garlic ages before the onions become soft. That is a cooking basic. There are many different variations of moamba depending on what region of Angola you are from but it is always served with funge. The contrast of the sticky bland funge with the goopy spicy moaba is the best part of eating the dish. Some people make a variation of funge with corn flour which is easier to make but in my opinion not nearly as good. As for the person who mentioned that the main ingredient is peanut butter that is only true in certain regions. It is truly delicious and resembles closely a dish from Guine Bissau which is called Caldo Mancarra. But in my experience the form of moamba without peanut butter is much more common. I've only ever eaten it once with pumpkin. The chicken, onion, garlic, malagueta, palm oil, and okra with just salt is the base for most variations. Good luck with the rest of the alphabet.

If you pierce the butternut squash skin and then microwave it for 5 mins, it's much easier to peel!!

OMG! Get everything in place first... Jamie is growing up! Mise en place now. You'll find similar stews in a few countries when you look. I am surprised you don't know Okra at all. It's used in Louisiana's gumbos. When you get to Senegal you'll find something similar to this particular dish called Suppa Kandja. You'll have sauce graine from Côte d'Ivoire that uses palm oil so keep it around. Smh at you not having CASSAVA and not even knowing what it is...If you want to make pan de queijo from Brazil you'll need it. Very simple and tasty recipe. May I suggest you plan a few countries in advance that way you know which dishes to try based on "reusability" of ingredients? You should be able to find ways to use this palm oil easily going through west African recipes. Edited to add: most African countries have some type of fufu (pronounce foofoo). You better learn how to make it. It's a crucial part of the dish. If you do Chad without making "la boule" or Kenya without making Ugali then you've missed something big.

Was the squash cooked enough? Typically, it takes a while to cook until fork tender. But still, this dish would be amazing with basmati rice or saffron rice!

Red palm oil is amazing, I can honestly see why palm oil became such an insanely overproduced commodity. The good-for-earth stuff is pricey but worth it. It's my favorite neutral oil to work with, good for frying, full of carotenoids and shit, has a taste but not a strong one, high smoke point, healthy and deliciously saturated

This dish btw is not influence by portugese cooking, just want to mention that. This is cooked in most place I've been in West Central Africa ( Guinea Equiatorial / Cameroon / Gabon / Sao Tome ). Same dish but by many different names. I personally cook this with goat/mutton and really beef broth not maggie bullion for example.

Actually it is, depending where in Angola there is lots of ways to make Muamba, there's aubergine and peanut paste missing but I have seen the way he cooked before while growing up back in Angola

Sorry is not the teal moamba i know . Is just oil in there . Where is the palm tree puree ? Oil is one thing and palm tree puree is another . Pal tree puree makes the mosmba creamier and gorgeous and with okra is a superb dish with all the other trimmings of course

We dont wash the chicken in Western countries -- the government says you definitely shouldnt -- its not necessary and washing only spreads germs around your kitchen

There is in indian recipe where the okra turns out very dry and delicious. I think you have to put the chopped okra in salt for a day and pat dry

As tasty as this looks, please try remaking this dish . Nice attempt but this is nowhere near how it's made . Not sure why ppl keep using this random recipe they found on KZbin. The main ingredient is peanut butter 😭😅🤣 it's literally in the name of the dish.

Jamie, I really love your channel. You're so humble and always persevere. But this video, man. You just cannot pass one habanero through a pot of food and call it "mega hot." That's an impossibility. That level of spice intolerance is an impediment as a chef. I would love to watch you do something you have barely touched upon. Explore the food of Southeast Asia. Maybe it will help you with your spice issues.

Very interesting video, I do not where this recipe was created but that's definitely not close to the real one. If you write the recipe name on youtube you will find many videos, unfortunately only in Portuguese... If I was you I would be equally concerned about the canola oil and bullion cubes …very unhealthy for your body. Olive oil avocado oil and coconut oil much better choice….boil a chicken better for the best chicken stock. Would never had addressed this but since you were concerned about the palm oil thought you might want to know other unhealthy foods. I do love your Chanel and watch most of vlogs. LA🇨🇦

Palm oil is a very healthy oil, when only used in cooking is very environmental friendly since Africa countries the palm tree is locally farmed or grown in our backwards and an elder in the neighbourhood will extract the oil for you for a fee, its only bad when it's industrialised for other things like soaps, etc.
