I love it when you cook with your parents! Two ways to thicken it up are to shake meat in bag with seasoned flour then brown in pot this will thicken stew, or you can add flour directly to pot in a slurry when stew comes to boil, also I like to take a tablespoon of paste and brown in pot with everything before adding liquid. Smoked paprika is also a great seasoning for stew. Keep up the great cooking guys!!

If you are looking for the pot he is cooking in. Look up a kettle or ditch oven the used to ushe them for camping cooking and are a great way to make soups. Stews, and sauces outside the house. Your pops stew is great you don’t have to and anything to thickens the starches from the potatoes will actually thicken the stew. Best part is it will taste even better the next day if you let it cool and than reheat it

It looks very much like a traditional Welsh lamb casserole (albeit you used beef) and your father is correct, it tastes better when done on a wood stove. It looked very delicious indeed.

Ohh I got it!!! Do a Dang Sauce Chili cook off. Caramelize those onions as it concentrates those flavors. Pop's Shop - his own channel. The liquid part of the stew, call that the broth, Stew, soups and chili - perfect food for a cold day. You can do a 'Red Top' too which is chili on top of stew. Use corn starch to thicken that broth. Sorry, rambling.
