I used Worcestershire sauce and 1/2 a teaspoon of liquid smoke, marinated for 5 hours. Seasonings were fiesta steak seasoning, garlic powder, oregano, paprika, black pepper, added three sprigs of rosemary. Cooked on hi heat for two minutes per side After I cooked the steaks I sliced “not diced” half an onion, sliced two mushrooms, pressed four garlic cloves and sautéed in the same pan. Topped it with some green onion for garnish. Turned out excellent, thanks for this video. I have always eaten backstrap/tenderloin fried and this is an amazing change from what I’ve always done

My friend John was always hunting his aunt's property in Oklahoma and one of his favorite ways to cook venison was to cut into jerky pieces or medallions and then pan fry and add some onions. Another thing was cut the meat in stew chunks and then make slow cooker stew. Normally, he gave the ribs to his dad, who fed those as treats to the Beagle dogs he raised. One time, John gave me a rack of ribs and I smoked them with my favorite brisket rub on the charcoal grill with mesquite logs in the side firebox. That came out like a savory jerky. There is always something good you can do with venison. You just have to treat it like really lean stake. And remember that tallow has a higher melting temperature than beef or pork fat. So, better to cut that out unless you just like the gamey taste of the tallow.
