It’s so surreal to see the roots of African-American cuisine being cooked and prepped in its region of origin. This makes my heart smile to see all the influence we’ve passed down as slaves. Please i noticed she added salt before adding the beans , but i thought when preparing beans you don't add salt until it's almost cooked or?

The reason for that is because the salt prevents the beans from becoming soft fast that is why you put it in when it almost cooked. She added bicarbonate of soda it will help it become soft.
