Oh Mama Mai got me when she told Jeannie if she wanted to know how it's done then she can take the time to watch her Hello Hunnay show and she can learn from there. Literally LOL!! Jeannie's facial expression to me was like "The hell you say?" These two crack me up! I just love how Mama Mai cooks. I'd love to be in the kitchen and soak up all her knowledge. Shrimp paste Bun (vermicelli noodles not thick) Shrimp with head Dried shrimp Pork neck bones Chicken broth Crab meat any canned or fresh Octopus/squid optional Rieu (crab paste in soybean oil) Eggs Tomatoes 5 or more Mushrooms optional Tofu fried or fry them yourself Garlic, onions Rock sugar (yellow) Fish sauce Cilantro, scallions Chili pepper if you like it spicy Very hard to mess up. You'll love it!! Just a tip, shrimp paste adds ton of flavor but a little goes a long way. Hope you love it as much as I do. Sorry I didn't categorize the ingredients, its just from the top of my head.

I learned to cook my favourite Vietnamese foods in university when I was away from home and the comfort of lunch with my mom whenever I wanted at pho restaurants I grew up going to. I learned to use chopsticks at 4, and researched recipes and combined them by the taste I loved... so when Jeannie came out with this I felt like I had to watch bc it’s one of the only mainstream* celebrity type representations of Vietnamese cooking I have seen. I wasn’t expecting there to be such a big gap between how excited Jeannie said she was about making bun Rieu, vs her actions and attitude. There wasn’t even an apology for being late and not being there to help, just an expectation that everyone would wait for her when it’s her own mother cooking and who knows how much time just getting everything. It’s fine to be late, and to be slower to learn, but to be giving attitude/raising one’s voice/be upset that no one waited for her AND say how this is her favourite dish.... can Mama Mai have a show where she just cooks with Paul? Vietnamese food is so special especially when passed down. This is the only video I’ve seen where it’s not truly respected, which sucks since this feels like the only celeb representation I have encountered

Ingredients Dried shrimp ( when you buy shrimp, buy it whole (including the head) Fresh shrimp Large tomatoes Cherry tomatoes Mushrooms Firm tofu 2 whole garlic bulbs Dill Spring onion Crab paste Fish sause Pork neck bone Rock candy Cuttle fish Noodles Food prep Dried shrimp - Separate the shrimp (body and head) Soak dry shrimp body in water for 1 hr Add dry shrimp body to blender with some water Add dry shrimp heads into a water to make a broth), cook slow on hob. Fresh shrimp - chop with knife Cut tomatoes nice and chunky Cut mushrooms long Cut firm tofu Cut spring onion Chop 2 cloves of garlic Chop Dill Crack 6 eggs put them into a oven cooking dish Rieu Take the 6 eggs that have been cracked and whisked in the oven dish. Add a tablespoon of shrimp sause and mix Add 2 gars of crab paste Add ground pork, and dried shrimp and fresh shrimp and add 2 cans of canned crab into the egg mixture and mix Add fish sause Add the fried chopped garlic into it ( 2 whole bulbs) Smooth over the top Cook in oven in 60 mins Main broth Add pork neck bone into water and add rock candy and sea salt. Let it broth up for 2 hours (low flame obvi) Add the shrimp head broth into the main broth (obi remove the shrimp heads) Add 2 cans of chicken broth Add cuttle fish to broth and cook it in the broth for 3- 5 mins Remove the cuttle fish Add hard tofu Add mushrooms Add the rieu Add tomatoes (chunky cut) Add tomato ketchup Add rock candy Add cherry tomatoes on top sprinkle Add spring onions (sprinkle on top) Making the bowl Place pieces of the sliced cuttlefish (Cut the cuttle fish (long thin slices) Add noodles on top Add broth Garnish with generous amount of dil

Fun fact: It's called bun rieu because the 'rieu' (meat mix) when done right, mimics the foam of the sea when added to the broth. Suppose to look like the foam anyway. Lots of different methods. Delicious none the less. I asked my mom awhile ago and that's what she says. :) this also happens to be her best dish.
