usually ppl gonna let the batter rest/fermented, u can actually cut corner by mixing some beer into the batter before u fry. The gas inside beer make cake buffer and more crispier when you fry in low heat with cover.

I know that coconut lady. She squeezes coconut milk with coconut water, not regular water. And she was asking if you want nước dão, aka second pressed coconut milk. Nước dão is often used to make chè, because you can boil it to impair coconut flavor into the ingredients without having denatured it like with coconut milk. Edit: the yellow color of bánh khọt is from turmeric. Adding turmeric can enhance the rich flavor of dairy and coconut milk. I haven't tried on other plant based milks tho.

Damn I'm Vietnamese and I don't even know what "khọt" means until now! Always thought it was a local slang or an old word. Never cared to look it up also. 😂 Bánh Khọt is one of those Vietnamese savory dishes that are quite calorically dense and easy to overindulge in, so always have it with lots of green to keep your appetite in check!

Fun fact, on that exact same street, right at the corner of Tôn Thất Thuyết St and Nguyễn Khoái St. (exact Google Maps coordinate is 10.753084, 106.695562) is what I consider to be the best wonton noodle soup in the entire city. It is a tiny family-owned noodle shop that has been running for at least 50 years. My grandfather ate there, my father ate there, and I grew up eating there. The soup and wonton are fantastic, it's cheap, it comes in 2 types of noodles made in-house (you can order both) and you order by how many handfuls of noodles you want (vắt mì, typically I order 3 for a standard bowl). The lady who ran it since I was a small child is still there last time I visited.

This is one of my favorite dishes. I definitely enjoy you going to the street having it at the restaurant and then coming back and cooking it. I think when you try it next time with the more cornstarch that’s gonna make the difference.

My home town is in Cần Thơ city, and the way the make bánh khọt, may not have shrimp, may not have pork, but it has to have mung bean and some thick coconut milk in the middle. I used to make it with my family, the steps were: pork fat > batter > coconut milk > mung bean > pork or shrimp, so if you add those ingredients it would bring even more to it

There's a very popular spot in d4. If you're heading towards d7 on Khan Hoi st. Turn left on So 41. It's on the left before the street ends. They do banh khot with pork floss and drizzle coconut milk. They do great banh xeo. The other go to spot is near Turtle Lake in d3. Co ba vung tau. Those are my 2 spots. Have to have banh khot Tom at least once a week. It's an overlooked vietnamese treat. Probably my favorite dish. Either it or Mi Quang. Enjoy your videos. Thanks

You can add a little tapioca flour. Add a tsp of oil to the batter. Use ice cold water. Stir the batter with chopsticks but not too much. It's fine to have clumps. Blending adds air which we don't want. Sorta like pancakes. Once mixing the batter, use to cook within 20 mins. If you let it sit, you get a soft and tender product instead and we are after crispness. You can try using coconut cream instead of coconut milk (higher fat content tho) No need to season the shrimp because that adds too much moisture and you're already dipping in the nuoc mam dipping sauce which has the salt 🤷♂

I’m not sure if you know or not but after you pour the batter into the cup you’re supposed to scoop out a little bit of it to make room for your ingredients like the pork and shrimp. Otherwise it will over flow and you can’t control the batter and get that nice shape.

Fun fact about Banh Khot, it also have a vegetarian version Ps: 3:14 i feel this, there's this one place selling Pha Lau and i've been eaten at that place since i was a student til even i'm a working adult, after the covid wave hit HCM city she wasn't at that spot anymore, i asked around and people said the wave hit her hard financially due to lack of customer so she went back to the countryside.

Banh khot ready made flower can be bought in the US that’s imported from Vietnam Co.; all the Viet related powder dishes are imported from Vietnam and are available at Asian markets also. Being in Vietnam that long and clueless on this😂

This is also one of my favorite dishes...I also prefer the Mien Tay version...the Vung Tau version is too oily and kinda hard/crunchy. If you want to make it at home, just buy the banh xeo flour and voila. Huong Xua brand is good.

The batter needs to have more liquid than the flour that you have, and use a lot more oil, like banh xeo, spreading it thin will create a crispier texture.

I tried these in Nha Trang, they served it with sliced mango which I find weird. But I didn't like it whatsoever, the flavor was plain and the mango didn't do it any better 😂 , on the other hand my gf liked it a lot.

I think it's because of the flame and heat from the a conventional stovetop. Doesn't the street food and restaurants use really high heat? A stovetop won't get to that type of level.

you made the batter a little too thick, and not enough oil/heat: from what I know the lighter the batter the crispier they stay, also it'll take much less time to cook but can still keep the creaminess in the middle

i think the batter needs to rest at least overnight so the rice flour can hydrate and fry with lots of oil too. Your batter needs to be more fluid. That batter is way too thick.
