Going to have a go at this tonight, got 6 quails, but I am going to use Rick Steins Partridge with Dubonet recipe for the sauce. ie, roasted on a bed of olive, bacon, shallots and garlic,

I tried something like this for thanksgiving (didn't have all the ingredients mentioned here) but it came out really well! Wouldn't have thought to add grapes into the sauce.

I have a question - how do they fillet the quail so that the breast and back bones are removed without disturbing the skin? I would really like to see how this is done.

I'm sorry they are basque and the basque can either be from northern spain and souther France and that's the kind of music they like specially the spaniards during the bull fights.
