From what I've learned from my time as a dishwasher in a few kitchens is that there's alot of shit that goes on that the customer has no idea about, such as flies that the cooks don't care about because "the heat is going to kill everything anyway" and that's from a pretty expensive one at a golf course, never judge by a fancy building it's all about the staff...

"Broth" is the water from cooking meat by boiling. Its basically soup, but without the chunks. "Stock" is the water from boiling bones (and some meat) for a long time. Has lots of collagen, and is very tasty and nutritious.

A stock is what you get when you boil the bones and cartilage and shit. Broths are made of the more edible bits, like the meat. Stocks are heartier and has a more robust taste, but broths are quicker to make and have a cleaner look.
