It's similar to the tamales we make in Mexico. Here they are stuffed with meat, chicken, cheese, spicy or fruit. they are also wrapped in corn husks. They are steamed. they're delicious.

Tati, We do not add Cassava Dough to Ga Kenkey. Perfect Ga kenkey is prepared with only corn Dough. No Cassava Dough is added.

There is no one way to do everything . I like the cassava dough idea. It is a practical enhancement to the consistency. No different from how jollof or fried rice and many foods around the world has been improved!

You have tried, but cassava dough is not included in the authentic original GA Kenkey consumed by the Gadangmes. The afrata is cooked dough mixed with part of the fermented corn dough. You need to get the original Gadangmes whose staple diet is Komi (Kenkey) to give you the ingredients and preparation tips.

The Aflata should be cooked very well like banku and exact amount of corn dough used for the Aflata should be mixed with it . This way of making banku is not the original.
