Aww, I loved seeing your mum. My mum was Theresa too, (and she was "chefy") so this was quite special for me, as it brought memories of me in kitchen with her. I've always prepped my corn dough this same way, for many years. Sis. Adjeley, you may like theses tips my mum also taught me: In winter/cold months: * Use warm to hot water to mix the dough. * After one week of fermentation, remix dough thoroughly, and cover tightly again with fresh saran wrap, then container lid, and ferment another week. In summer/hot months: * you can reduce second fermentation by a few days... all weather temp. depending, but the remixing and second fermentation makes the dough smooth, soft, silky, a truly delightful outcome. You don't even need to add cassava dough to it when making banku... it is that silky smooth! I've taught many of my friends this method. I hope you try this too. Thanks for sharing your skills. My corn dough looks amazing and not a single bit wasted - I told my little sis that your mum said the cling film should hug the dough and it is just incredible.
