@pittsandspitts knows that I push the hell out of everything I use…weapons, vehicles, sunglasses and definitely what I cook on. So when my old unit crapped out, the boys from Houston stepped up. I’ve been using this 1250 from them for about 3 years now and it’s definitely the most badass grill I’ve ever owned. It’s made completely out of 304 stainless steel…that’s marine grade baby. Big wheels (always cool) make it easier to load on and off a trailer. Fully welded construction so even I’m not worried about anything breaking off. And the best part, made in Texas by Texans.

Hey Tim, no worries about the carcinogens, although you can tell by the way the butter and tomahawk was smoking on the cast iron that it was too high of a temperature for searing, and was burning the butter and surface of the steak. Still came out totally mouthwatering and amazing at the end, im just saying that for the searing part you should try a slightly lower temperature in the future and will produce better results in terms of caramelization, rendering and locking in juices before the smoking process. Try smoking first and pulling 20-25 degrees before desired doneness. Sear with beef tallow or clarified butter, the milk in the regular butter burns when searing like that.

Instead of butter which burns I would’ve used high temp oil like avocado oil or grapeseed oil and seared it with that first before finishing it on the smoker. Now I would cooked up some butter, rosemary etc and basted the steak with that.

Hey brother, you put foot to ass for a living, i put food and wine on the table. Let me transfer knowledge where I can. Butter bathed, not butter seared. You are looking for mahogany dark not black with your sear. Black is bitter, dark brown food taste good. Sear with high temp oil like avocado, then smoke slower around 300 until 115-120 internal temp. Pull the steaks off the smoker and let it rest for 20 mins. In a cast iron pan melt tons butter with whole garlic cloves and thyme over medium heat. Add the steak into the pan at 12:00 o'clock with the handle at 9:00. Tilt the pan up so all the butter goodness Pools down at 6:00 and use a spoon to throw the hot butter on top of the steak over and over. Butter bathe your steak until internal temperature hits 125. Let it rest for at least 10 minutes which will carry the temp up to 128-130 and thank me later.

That's in reverse of how I usually do them, but I'll give the sear first a try next time. I also use a lower temp in the smoker and smoke them longer. I too shop locally if I can, and determined to not buy CCP even at higher costs, and yeah, don't patronize anti-2nd Amendment business.

Great vid as always. FYI. I’d go without butter next time as it burned instead of sear. Can always combine butter and oil together to reduce burn as well.

He burned the butter and spices. Burned = bitter and inedible. Never sear your steak with butter and spices. That’s a rookie mistake. Only with salt and pepper. And if you’re going to smoke it, smoke it first then sear. That way you get a better crust because the surface is drier and you get less grey banding since the steak’s temp is slowly brought up. Food was horrible, but the dog was amazing. You can tell by her drive that malinois is an amazing working breed.
