Ruth is so beautiful, and precious to hear her speak. Probably the reason why she seems so alive and 100% mentally is because her doctors have not put her on many medications or better yet none. I hope Ruth teaches her how to say "varnishkes." She keeps saying "varNISHkes." It's "VARnishkes." Yes, it matters. Kasha, btw, is buckwheat, one of the few grains that has a significant amount of protein in it. People all across central and eastern Europe relied on buckwheat, prepared in various ways, to survive. It's not a form of wheat, and it's even gluten free.

Aside from the Schmaltz, she makes it just like my grandmother. With the Schmaltz, she makes it like my great-great grandmother. We use butter now, as it is easier to get and keep out where we live.
