Curry Goat cooked in the oven 5 pounds Goat meat (shoulder) 1 tsp black pepper 2 tsp salt 1 tbsp cumin 5 - 7 tbsp curry powder 1 tsp red pepper flakes 1 tbsp safrito seasoning 1 tbsp pimento seeds 1 large onion sliced 5 cloves of garlic sliced 3 sprigs of scallions sliced Thyme Remove excess fat from meat before washing with vinegar and lime juice. After seasoning the meat, you can leave it to marinate if desired. Add 1/2 to 1 cup of water and cover before placing in oven to cook for 4 hours. Shake the pan every hour to move the meat around.
