Hello there, and thanks for watching. I’ve attached the list of ingredients in this comment for your convenience. I couldn’t fit a list this long In The description box. Please enjoy the recipes, and I hope you try them all 🙏🏽❤️ 1st recipe INGREDIENTS: * 2 large fresh tilapia cleaned and cut to desired sizes * 1/2 tsp garlic powder * 1/2 ginger powder * 1/4 tsp cayenne pepper * 1/4 tsp cumin powder * 1 tbsp all purpose seasoning or 1 chicken bouillon cube * 1/2 tsp crushed white pepper * 1 tsp salt (adjust amount to taste) * Avocado/vegetable oil for deep frying * Aromatics for frying - fresh thyme1 scotch bonnet chili, fresh Rosemary and small bundle of scallions Tomato base stew ingredients: * 2 red onion thinly sliced * Half cup of oil fish was dried in * Blend of 4 Scallions, 3 Scotch bonnet chilis, 6 Serrano chilis * 1/2 tsp curry powder * 1/2 tsp crushed white pepper * 1 tsp all purpose seasoning or 1 chicken stock cube * 4 cups tomato sauce * 1/2 tsp smoked paprika * Few optimal fresh onion rings for garnish Second recipe INGREDIENTS: * 1 large red snapper Fish 2lbs (cut to steaks) * season fish with (1/2 tsp each white pepper corns crushed, dry chili flakes, garlic Granules, onion Granules, salt, Thyme, and 1/4 tsp paprika) * 1 tbsp all purpose flour * oil for Deep frying * 6-8 shallots Thinly sliced * 1 red and green bell pepper * 1 jaleapeño pepper * 1 tbsp Thai chili minced * 1 tbsp garlic minced * salt to taste * 1/2 tsp crushed black pepper * 5-6 tbsp oil from deep fried fish Third recipe INGREDIENTS: Tamarind sauce ingredients: * 10 tamarind removed from pod * 1 & 1/2 cups hot water Fried tilapia ingredients: * 3 medium fresh whole tilapia cleaned * 1/4 tsp salt (adjust to taste) * 1/2 tsp all purpose seasoning (substitute chicken or vegetable bouillon) * 1/2 tsp crushed white pepper * Oil for deep frying * Optional sprig of scallions as aromatic for oil Smothering sauce ingredients: * 2 & 1/2 tbsp tamarind sauce * 2 cups = 32 oz tomato sauce * 1/2 cup chopped shallots (about 6 shallots) * 1/2 tsp curry powder * 1/4 cold pressed coconut oil * 1/2 tsp salt (adjust to taste) * 1/2 tsp all purpose seasoning * 1/4 tsp fresh or dry rosemary * 1 scotch bonnet chili minced * 1 tbsp minced garlic * 1 tbsp minced ginger Fourth recipe: INGREDIENTS FOR FRIED FISH: * 2 & 1/2 pound red snapper fish * 1/4 tsp of crushed white pepper * 1/4 tsp of granulated garlic * 1/4 tsp of salt or season to your preference * gallon peanut oil for deep frying (substitute with avocado oil or vegetable oil) INGREDIENTS FOR SALSA/ PICO DE GALLO: * 1 cup chopped tomatoes * 1/2 cup chopped onion * 1/2 cup chopped jalapeños (seeded) * 1/2 cup chopped red bell pepper * 1/4 cup cilantro * 2 Tbsp lemon or lime juice INGREDIENTS FOR GARLIC AND CHILI INFUSED OIL: * optional 3 cloves garlic thinly sliced * optional 6 small Thai chilis * optional 3 Tbsp vegetable or olive oil Fifth recipe INGREDIENTS: 4 large pieces of whole cleaned tilapia 4 large salad onions skinned and half’s 4 scallions or spring onions 4 cloves of garlic 6 Serrano chili. Substitute with two habanero chilies or two scotch bonnet’s 1 thumb size ginger 1 sprig fresh rosemary and substitute with 1 teaspoon of dried rosemary 2 cups of extra-virgin olive oil and substitute with same amount avocado oil or almond oil 1 tablespoon chicken seasoning and substitute with one bouillon - use any flavor of your choice for an umami note 1/4 tsp crushed black pepper 1 tsp salt Sixth recipe INGREDIENTS: * 3 regular size mackerel cleaned and cut into steaks of 1&1/2” thickness * Marinade mackerel with 1/4 tsp each granulated garlic, onion, crushed black pepper, 1/2 tsp salt, or to taste, 1 tbsp olive oil, 1 tsp Worcestershire sauce, zest of 1 lime, or 1/2 tsp thyme * 1 each red and green bell peppers * Optional 2 banana peppers * 1 sprig or 1 tbsp rosemary * 1 tsp white Pepper corns * 1 habanero chili (adjust amount to taste) * 4 small bay leaves * 4 sprigs of spring onion * 4 large shallot onions or 1 large red onion * 10 Roma tomatoes (remove seeds) * 3 cloves of garlic * 1/2 tbsp Ginger * 1/3 cup olive oil * 1 tbsp paprika (optional) * 1 tsp Worcestershire sauce (substitute with maggi or soy sauce) * 1 tsp salt or to taste Seventh recipe INGREDIENTS: * 2 Large Red Snappers weighing 2 & 1/2 Lbs each * 3 bell Red peppers chopped for bed * 2 large onions (1 chopped for bed of vegetables, 1 wedged & roasted for dip * 3 medium tomatoes & roasted for dip * 6 Serrano chilis (4 chopped for bed of vegetables, 2 halved & roasted for dip) * 3 Tbsp lemon pepper for fish and vegetables * 1 tsp fish sauce for dip * olive oil for coating fish and vegetables * olive oil for drizzling on dip (optional) * 1 cup roasted peanuts * sprinkle of a pinch of salt on wedged onions and halved Serranos (optional) Red snapper recipes are guaranteed flavorful and nutrient packed lunch, or dinner menu ideas. Delicate fish that requires very little finagling to bring its clean flavors to the forefront. In this recipe, the red snapper gets a generous coating/rub from good old lemon pepper seasoning, before hitting the oven for grilling. The red snapper end up with excellent, Smokey barbecue-like char, and quality that’s very enjoyable ✅ Red snapper oven grilled on a bed of colorful, crunchy, nutrient packed, sweet bell peppers and onions, has been a great way to retain juiciness, and maintain clean ocean flavors in this beautiful, yet delicate fish. The oven grilled red snapper is thoughtfully paired with a roasted peanut and charred vegetable dip, inspired by Ghanaian “abomu” and boiled ripened plantains. The sweetness from the plantains and the savory notes from the dip and fish are simply delicious! Enjoy! last recipe iNGREDIENTS: * About 1000 g grouper steaks (6-8 pieces) substitute with snapper, bass, or any fish low in oil content * Season fish with 1/2 tsp each salt, curry powder, vegetable bouillon, and 1/4 tsp crushed black pepper * 1 cup all purpose flour season with salt and pepper to taste * Cooking oil for deep frying fish Ingredients for stew: * 1 cup cold pressed coconut oil * About 10 small curry leaves (substitute with 4 fresh basil leaves, or 1 bay leaf * 1 large and 1/2 onions chopped * 1 heaping tbsp ginger and garlic paste (equal part ginger and garlic ground into a paste) * 2 heaping tbsp tomato paste * 1 tsp curry powder * 1 tsp vegetable bouillon * 4 cups tomato sauce * Season layers with salt and pepper to taste * Add whole habaneros for garnish, or use any garnish of choice *** Stew cooking time is about 30 mins ***

Wow this is a great job weldone sist, the eight method is whole lots job for shooting. I like all the method but you know we here in Ghana don't play with your method one which is red snapper, the mackerel fish method and the tilapia fish method😃. I'm Hispanic with a Ghanaian boyfriend and every time I'm going to cook for him I always watch them when I'm going to prepare a Ghanaian dish. I love African food . I was introduced to Ghanaian food in 2004 my youngest daughter have friends from Nigeria so I enjoy that style of cooking too. I been watching your videos since 2019 and my cooking skills have improved. I don’t have anyone to cook for just me my meals are always small if I cook a lot then the leftovers go in the freezer, I have problems with making the Fufu and Bantu my wrist and arms hurt. I don’t think I’ll ever master cooking them.

I just love watching you cook! You make me happy ! Seeing you enjoy the cooking ! My husband is from Africa ! Married 35 years! and it nice to occasionally cook something close to a traditional dish! I learned 2dishes from my mother in law be4 she passed my 3 of my sister in laws over 2 period of 6 years ! Live in different states .I also learn to one my own! Didn't always come out exactly right but sometimes it does! U make it so easy! So, I love you and thank you for that ! SO, good! It's what I REMEMBER, when someone else cooked in pass !Now, I can do it I love all your fish dish!

You asked about the pronunciation of Worchester or Worcestershire sauce. Well, I was born in England, so all my life I have heard British people pronounce it many different ways; although I haven't heard many say it your way; just take your pick!😅. Here it is broken down: Wu-chess-ter or Wor-chest-ter or, most commonly WU-STUH-SHUR (WOOSTER -SHER) Hope that helps.

nanaaba, i loved fish a lot when i was a little girl, i loved how my mother made salmon and white fish recipes and served it with chinese greens or cucumber salads, but since i've gone vegetarian i haven't had fish in so long. i hope that one day we can get to the point where lab-grown fish is cheap and commercially available, so i can enjoy the taste without hurting the animals or the planet. so, i'm saving your videos until then!

I’m just seeing your show…. For the first time…. Here in nyc Brooklyn., originally from jamaica W.I ….. and I must say., You’ve open my eyes and taste buds to African food…. Especially when it comes to fish…, and the way you make the sauce…, now I understand. Because at first just looking at it in a restaurant it used to look unhealthy to me…. But with your videos and style of explaining and your expression with each dish…. Just makes me even love Africa more….. and more over your constant choices of fresh spices and herbs…. Being Kenyan, I've tasted several fish types, but for me, no fish comes close to wild Tilapia. It's just soo tasty.
