Kristen, for future reference - butter and flour should always be 1:1 ratio. cook the flour in the butter for a couple minutes to get the flour taste cooked out then start adding milk and it cheese and stuff and it was start thickening from the butter/flour mixture. 1:1 is so easy to remember and is always super easy and you'll never need to look at a book again!!!

@@nina6387 exactly. the more sauce you want, the bigger amount of this starter you will want. If you do a cup of each, that can easily thicken enough cheese sauce for a pound or more of pasta.

You're right but u should always cook the butter and flour then add the milk and trust me u don't want to have that thick bowls in it so u should whisk it well before adding the cheese

By using that metal whisk against a non stick pan you're actually gonna end up breaking down the nonstick layer. Might be also why you have less of a "clean pan" at the end. This looks SoOoOOOo good though

If you're using Teflon pan, don't use a metal spoon. It'll scrap the Teflon and it's dangerous. By the way, that mac and cheese looks delicious

Okay so if anyone really cares here's what's up: The butter and the flour should be a 1 to 1 ratio and that is called making a rue. Adding milk to that makes it a bechemel and adding cheese to that makes is sauce. Adding the truffle butter last makes perfect sense because truffles will lose their flavor if they are at a high heat. Some tips from someone who watches way too many Bon Appetit videos.

That was pretty close to how I make my Mac and cheese. My only suggestion is equal parts butter and flour for the roux, then add your milk and once it thickens you’ve got a basic white sauce. From there on you can add whatever cheese, seasonings, Dijon, etc! Looks super good 🖤

I make a similar Mac and cheese with the butter/flour/milk mixture but we add 1 tablespoon Dijon mustard, 3/4 cup of spicy Monterey Jack, 3/4 cup of old cheddar and 3/4 cup of Parmesan, mix it well, out in a lasagna dish with 4 cups cooked noodles then sprinkle it with bread crumbs and bake it for 30 mins! It's amazing!!!

beautiful Kwisten.... i have a tip for u..once the butter melts, add in the flour and whisk it up until you can't smell the flour anymore. it's supposed to look kind of like dough. It will pull clean off from the side and bottom of the pan, then whisk while you pour the milk in then add cheese. but... thanks to you i am going to try this lol i LOVE truffle butter.

For a roux it should be equal parts butter and flour, cook for about 2 minutes until golden and nutty smelling (over med heat) then generally when I make mac and cheese its 1 cup milk 1/2 cup cream. After things have thickened, about 3 cups of whatever cheeses. I also always season my roux before adding liquid and then adding more seasonings if needed. Taste as you go and you can't go wrong.

I've only seen you before in a few other people's videos but this was hilarious. The butter and the flour is called a rue very easy. And good job for even knowing what to do haha you did great for just throwing it together. I love how honest you are and it's ok to be stressed. Tip for the future! Try using equal parts of the butter and flour when cooking it, you're making a white roux, so also cook it on its own before adding the milk for a tiny bit longer! But not enough to change the color😄 then add your milk, simmer it without a cover until you can run your finger across the back of your spoon and it doesn't run over the wipe mark. But it looks like your way came out just as amazing! Go you for making it off the top of your head! If you feel like you might've put too much milk don't add more flour just let it simmer longer, the water will evaporate and get thicker w your roux🙂

Honestly if you meet anyone that goes by measurements 99% of their food is not as good, there’s something about not measuring and going off of flavor, sight of texture, etc that makes cooking so fun and each dish tastes different than before. I get this was BOMB

Kristen it looks BOMB! My lovely, you probably don't have a clean pan because your using metal to stir. That messes up the nonstick coating on the pan. You want to use wood, plastic, or silicone to preserve your pans 😊

It looks so delicious!!To make it easier when you’re making a roux. It has to be the same measurement. If you’re using 1/2 cup of butter you use 1/2 cup of flour. Looks really good though😋

I recommend melting the butter and adding the flour and whisking it until it’s play dough consistency. Then adding the milk to get a better gritty texture that you want.

yes!!! also be careful!! Metal utensils on a nonstick coated pan can hurt the nonstick coating, i learned this the hard way and my favorite pot is messed up :(
