9.28.2010: Nonna Pia, Pia Calendrelli, 73, shows how she makes tomato sauce in her Smithfield garage using slowly cooked fresh Roma tomatoes, a process she learned growing up in Italy from her grandmother.

Because 3 reasons. 1) Some are people that expected a full how-to video. 2) Some know this is the hard way & that a food mill (the machine she says that takes "too much time") is really the only way to fly when you have that many tomatoes. This lady creates more work for herself, plain & simple. 3) This method of canning is outdated and dangerous.

Some videos on making fresh tomato sauces I have seen first boil the tomatoes for a short while and then put them into ice water in order to more easily remove the skins. Is this necessary?

The tomatoes are so important, lol it's all about the tomatoes, seeds and skins gone awesome, I use a food mill but this way is actually faster

No its not. I hve used a manual and electric mills and both are faster than this strainer method, way faster. And I even run the refuse through 2X and it's still faster. You have no clue what you're talking about. Cleaning some parts of the mill is a bitch, but that's why I spray these parts of with a jet from a garden hose before washing inside with soap and water. But then again cleaning a strainer properly is a bitch, too.

This lady has no idea what she's talking about when she says the machine she has (a food mill) takes more time. No way! I used to do it exactly the way she does it, then I bought a $500 mill and it saved me loads of time. I even run the refuse through 2 times and it still saves me time. I can mill 50-60 lbs. of tomatoes Iin 15-20 minutes, and that includes mulling the refuse twice! I'll admit that cleaning certain parts of the mill is a pain if you try to do it in a kitchen sink. That's why I do it outside with a garden hose with a jet sprayer. Then I wash with soap & water in the kitchen sink. A food mill DOES NOT take too much time lol. The way she does. She must be using her mill wrong or she just one of those old, stubborn Italians that prefer to do things the hard way, not the smart way.
