@@WolfHeathenA hint of sugar is a common addition in Swedish meatball recipes, and brown sugar has more interesting flavour. The worst crime is finishing them off in beef stock (although at least he didn't boil them in gravy). The gravy is too runny and light on cream for my taste as well (and ideally should include blackcurrant jelly). Nothing wrong with adding garlic or parsley to taste, either.

I’m surprised frozen lingonberries doesn’t exist in IKEA. Just mix it with sugar and you have ”rårörda lingon”, it’s supposed to be sour and sweet at the same time. It’s not a jam. As for the meatballs, allspice is for christmas and personally I don’t want it any time of the year. I didn’t catch the other spices there but nutmeg is tasty but isn’t something I’ve used for meatballs. Most people go by 75/25 I think. Minced chuck is always preferable so you can go less with pork. I like anjovis for the saltness but garlic is never once used. As for the ”gravy”, there needs to be much more heavy cream since it’s a sauce and not a pure gravy. The use of stock and flour and butter is great to get a thickness to it. Adding some soy sauce is great to flavour it of with. Also we serve it with something called pressgurka. There’s no original recipe and it looks tasty nonetheless 7/10 would eat

So, the meatballs are ok, the allspice isn't necessary but is used in a lot of Swedish traditional dishes and goes well with this. The garlic is a huge error. Remember, this dish comes from old poor time Swedish cooking, way before "exotic" influences like garlic entered the scene in the 70-80s. The gravy is ok, but sautéing the meatballs in beef stock is not. However, the gravy should indeed be started from the frying juices of the meatballs. Then mashed potatoes should go with it. And by god, the lingonberry jam is sadly left out. So important and central part of the dish.

Well done! I won't complain about the garlic. It isn't traditional (some decades ago you couldn't even find garlic in Swedish grocery stores), but it doesn't ruin the dish. Cognac is definitely not a common ingredient, but appears as something that could've been used 70 years ago or more if some chef/cook wanted to make a luxury version of the dish at a special occasion. I'd definitely try this!

@@reallivebluescat Perhaps not brown sugar but for instance Leif Mannerström, one of Sweden's most renowned chefs, once recommended using a little sugar when browning onions. At least since the late 1800s traditional Swedish food has been rather sweet. Around 200 years ago sugar was expensive, but when it later became more affordable and European countries found out how to produce it on domestic soil the consumption exploded. It was actually encouraged on a national level as a high consumption of sugar was seen as a measurement of a country's wealth. Around 1900 this was especially true of Sweden, as the nation was trying hard to catch up with countries like Britain, USA, Germany and France regarding standards of living.

cognac is normal in swedish meat balls gravy with wth black currant gelè or red. along with cream and stock. its actually what is used in the gravy. Now garlic is correct is not used. the spices used in swedishmeatballs is allspice pepper salt, during christmas ginger is used aswell. some use it even outside of christmas holiday since they like it. Suger is not often used due to the currant gel there is alot of sugar in already. So if you do not use that, then yes sugar i would recommend using.

Meatballs is the most common dish from Sweden. Zlatan is from Malmö. A more correct meal would be falafel. As Malmö is known to have the best falafel in Northern Europe.
