블루베리와 레몬의 꿀 조합으로 생크림 케이크를 만들었어요~
블루베리로 퓌레를 만들어 시트에 바르고 레몬 커드를 생크림 위에 올려 층층이 쌓았더니 상큼함과 향긋함! 그리고 달콤함과 부드러움까지~ 정말 맛있더라구요.
한입 먹고 입에서 와~ 하는 소리가 저절로 나왔어요.
제가 레몬과 블루베리를 둘 다 좋아하기는 하지만 이 둘의 조합은 정말 좋더라구요.
레몬 커드는 충분히 가열해야 달걀의 비린 맛도 나지 않고 쇠맛이라고 표현되는 맛도 나지 않는답니다.
생크림으로 아이싱하고 레몬과 블루베리를 붙여 자연스럽게 장식해봤는데 이런 방식으로 많이 케이크를 만드시더라구요.
심플하지만 풍성하고 귀여운 케이크인 것 같아요~

▶재료
달걀 4개 (약 200g)
설탕 100g
바닐라익스트랙 3g
무염버터 30g
우유 40g
박력분 110g
달걀노른자 2개
설탕 40g
소금 0.5g
옥수수전분 6g
레몬즙 60g
레몬 제스트 3g
우유 40g
무염버터 20g
블루베리 100g
설탕 20g
레몬즙 3g
생크림 350g
설탕 35g
▶레시피
1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 바닐라익스트랙을 넣고 섞으며 온도를 40도 정도까지 올린다.
2. 냄비에서 볼을 내리고 무염버터와 우유가 담긴 볼을 올려 녹인다.
3. 달걀 혼합물을 휘핑해 곱고 풍성한 거품을 만들고 박력분을 체 쳐 넣고 섞은 뒤 반죽의 조금을 녹인 무염버터 혼합물에 넣고 섞는다.
4. 섞은 것을 본 반죽에 넣고 섞은 뒤 18cm 틀에 반죽을 붓고 165도 예열한 오븐에서 40분 정도 굽고 식힌 뒤 윗면과 밑면을 자르고 3장으로 슬라이스한다.
5. 달걀노른자에 설탕, 소금을 넣고 섞고 옥수수전분을 넣고 섞은 뒤 레몬즙, 레몬 제스트, 우유를 넣고 섞는다.
6. 약불에 올려 저으며 걸쭉해질 때까지 끓인 뒤 무염버터를 넣고 섞고 체에 내리고 랩을 덮어 차갑게 식힌다.
7. 믹서기에 블루베리를 넣고 갈은 뒤 냄비에 넣고 설탕을 넣고 약불에서 저으며 걸쭉해질 때까지 끓이다가 레몬즙을 넣고 섞고 냉장실에서 차갑게 식힌다.
8. 차가운 생크림에 설탕을 넣고 뿔이 설때까지 휘핑한다.
9. 돌림판에 시트 한장을 올리고 블루베리 퓌레를 바르고 휘핑한 생크림을 바른 뒤 레몬 커드를 올린다.
10. 반복해 쌓고 케이크 전체적으로 생크림을 매끄럽게 바른 뒤 윗면과 옆면에 슬라이스한 레몬과 블루베리를 붙여 마무리한다.

30g Unsalted butter

110g Cake flour
2 Egg yolks

0.5g Salt
6g Corn starch
60g Lemon juice
3g Lemon zest
40g Milk
20g Unsalted butter
100g Blueberry
20g Sugar
3g Lemon juice
350g Heavy cream
35g Sugar
