It’s 1AM & I barely finished baking my pie using your crust & blueberry pie recipe. & lemme just say... I am OBSESSED. It’s flavorful & the crust is perf! My mother died a few years ago and she was known for her great meals and wonderful pies. Your love of butter makes me smile and topping your pies with milk and egg wash. As most of the world, I am on self isolating except for a walk in the coulees with my dog. Tired when I got home I tuned in to utube and watched your video on pie crusts and blueberry pie. Thanks, you brought wonderful memories and the smell of great cooking from my Mom and Grandmother as if it was only yesterday. You brightened your viewers day.

Have a little bit of respect for other people's food choices. FYI the sugar and empty carbs (flour) in the pie will kill you long before a spoonful or two of milk and egg in the wash ever will. Oh by the way, are you aware that the pie crust in the video is literally made with milk, butter and egg wash? And that Joe claims those are the KEY ingredients for an outstanding crust? Are you gonna call Joe a dumb moron now? This isn't a health food channel. Maybe you should go play in a different sandbox, you obviously don't belong here.

Hey Joe! Great videos....FYI, lemon juice is added to the blueberries when cooking them for flavor, yes, but the acid in the lemon juice also helps to release / develop the natural pectin in the berries. The pectin and the corn starch or tapioca flour will help keep the juices from the berries from being runny. Always add the vanilla after you remove the berries from heat. Let the cooked berries cool down before you add the vanilla as the vanilla is VERY delicate and the heat will destroy it. Thanks for sharing your expertise and videos with all of us...

That’s not the case with the pecan pies I bake every Thanksgiving and Christmas. The vanilla extract and my secret ingredient are added with the eggs and corn syrup and sugar and stick of melted butter and baked. Not any way to add the vanilla at any other point of preparation. The only thing that cooks off is the alcohol in the extracts, not the flavor of the main ingredient. Important to bake away the alcohol so it doesn’t add an undesirable taste to the pies. Thought everybody knew that.

I'm always more than happy to share my recipes in full and to share my experience / knowledge as well as learn from other people's experiences and expertise. Nobody knows it all. Yes, liquor cooks off at 172 degrees. Everybody knows that. Vanilla extract IS alcohol. The vanilla bean is soaked in alcohol...some use rum, others use Vodka, I use Everclear. The natural vanilla extract is used ( at the end of the mixing or cooking to preserve the flavor in custards and cakes. Foods that bake at higher temps such as cookies, etc. It's generally considered advisable to use the artificial vanilla extract because the flavor doesn't dissipate as easily as with natural vanilla extract. Check it out.

Amazing, so glad I found your channel! I subscribed, and I'm part ITALIAN. My mother's father, Antonio Giacovelli was from Bari. I taught both my daughter and son to bake and cook when they were small children. Barely out of diapers. They both love to cook and now are passing on the tradition. And the sugar on top of this great teaching lesson was playing Volara at the end. My mother's FAVORITE SONG. It brought tears to my eyes. I miss her every day. She made the most amazing strawberry glaze pie, coconut cream, lemon pie, banana cream pie, strudel, ..her crust to was fabulous. Coffee cakes all good Italian and French was her forte...on and on and on. Oh, almost forgot to tell you her merrange. SPELLING was the highest I've ever seen. She was French and Italian descent. A very beautiful and talented woman. A talented designer of clothing..only for her daughter's and granddaughters, and an amazing impressions artist. 💌🎀💌 I make my crust like you do although now I will add the milk instead of cold, cold water. I love what lemon does to blueberries, and I also always add a dash of freshly gerated nutmeg to any blueberry recipe, so I would add about a half teaspoon of nutmeg. I always grate nutmeg right into the liquid or the batter because the flavor notes I like are so volotile that they are quickly lost in the air. No mis en place for nutmeg in my kitchen.

Me too. In just about any fruit pie especially apple. Also and/or Mace which is derived from the dried lacy coating of the nutmeg seed. Mace seems to be less pungent but equally exotic and flavorful.

Looks like a terrific recipe. Just one thing: I've lived in Italy for 36 years and have never seen anyone bake a pie but me (and my children). Pie is American, as far as I know, but definitely delicious, and your recipe for both the crust and the filling look super.

Pies aren’t Italian. Nor are blueberries. Using Italian cooking traditions is great, but it ain’t Italian food.

@@rossmcintyre1710 We do have blueberries. I find them in the mountains. You can also find them in supermarkets, but they are pricey. It is much more common to use berries and other fruit in "crostate." The term "pie" has to be explained every time, in my experience.

Excellent recipe and technique! I will try the egg wash inside the bottom crust. Never thought of cooking the berries first, so I might try that, and also add the nutmeg. I do prefer using tapioca instead of cornstarch, because that's how my mother baked pies. The ancestors came from Germany, so pies were a big deal! I sprinkled the top with a mixture of cinnamon and sugar. Otherwise, your recipe looks fantastic. Including the pie crust, which I saw earlier. Wondering why you used unsalted butter. You don't have any salt in the berry mixture. I think a little salt would also bring out the flavor.

I don't eat sweets very often, but blueberry pie is my weak spot. This is the best recipe I've ever seen and you explain everything in such great detail. I guarantee I'll be making this very soon. When making your filling, my grandson asked what I was cooking that smelled so good. It was messy (first time for me making a crust on my counter top). I have never had a crust that rolled out so easy, perfect crust! Thank you , I think this will be a favorite for thanksgiving.

Hey Joe -I cook 3/4 of the blueberries with butter, cornstarch & lemon juice toward the end I add sugar to taste, than when cool I add the rest of the blueberries and one tablespoon of tapioca flour! Will try your way as well😉

We take the dough scrapes and roll them out and put melted butter over it and sprinkle with cinnamon and sugar and pop it in the oven and use a cutting roller on it as soon as it comes out of the oven to cool. It’s amazing. As a kid and now my grown kids hurry to make sure they get all they want because it’s gone in minutes.

I was sent the hand written recipe from a friend. I can't find it on here. Somewhat of a screenshot but the recipe is a bit different than the vedio like the three tablespoon of butter added to blueberry but what I saw on recipe says 1 tablespoon. Am I wrong?

My husband and I were watching the very end when you were tasting.....our mouths were watering....we both got really close to the screen as if we could smell it....or could transform ourselves into your kitchen. I can't wait to try this recipe. My husband loves pie and I have always been afraid of making the crust. He has been asking for a Sour Cream and Raisin Pie for ever. I made one years ago but, even with the filling tasting great, the crust was not very good. I think with your crust recipe and tips, I'm ready to try it again.

Instead of adding the corn starch with lemon juice,I take some juice from the skillet and wisk in the corn starch and then transfer the mix back to the skillet.and that will still be flavored without adding more fluid from the lemon.and I do like vanilla extract so I use butternut vanilla....delicious.and Nice video joe. try it my way just once.good video joe.

Cornstarch must be with cool liquid or it clumps. Vanilla always at the very END of the cook. You will lose flavor.

Great show about pie. Ovens can be contrary and I learned a little trick to help the browning. Since gravity brings the juices to the bottom crust, it can become soggy. If for the first half to three quarters of the bake time you cook the pie on the lowest rack, it browns an cooks well before the juice soaks in. Then it stays flaky and delicious. I cant wait to try the milk and egg to make a crust. Thanks for the lesson.

Another way you can save the bottom pie crust is if you take like a tablespoon of powdered sugar and sprinkle it in the bottom of it and up on the sides of it and leave a thin layer of it all over it that right there will also do the same thing as the egg wash

This was heavenly to watch in combination with the preceding crust tutorial… I can almost smell and taste those blueberries👍🏽🤷‍♀️ During blueberry season in East TX we used to purchase berries to last all year and freeze them for pies, cobblers, muffins, scones, preserves, pancakes, biscotti, smoothies, fruit salads, etc… Those were the days‼️🫐🍋🫐😘💋🫐🍋🫐Thank you for some amazing new tips and techniques.

I always love to learn new ways on how to make things either different or better. I love watching Joe because he's as OCD as Im am in covering as many pointers as possible to reach our "perfection". Im a Private Cooking Instructor (Mexican Cuisine). Funny fact: So far I haven't yet met a Chef or Cook who doesn't claim that, they are the best Chef or Cook in the World (egos, ha!!)...LOL

you can mix corn starch and sugar together dry to keep the corn starch from lumping. This is my first time watching . I can't wait to try the pie crust . Thank you I had fun..

Grandmammas BlueBerry Pie 4 pints of blueberry 1 cup sugar unsalted real butter teaspoon of vanilla juice from 1/2 of a lemon 1 and 1/2 tablespoon corn starch egg wash/ egg with milk Nutmeg, and 3 tbsp butter to the blueberries while cooking

I've made a couple blue berry pies and this inspires me to do it again. One recipe suggested adding fresh berries after the first ones have been cooked which adds a bit of a pop. My mother made delectible crusts with lard. I'm sure you'll hold me in distain, but I find the commerical crusts are pretty tasty and save a lot of time and I will try using an egg wash on the bottom. Your enthusism is half the joy of your videos. thahks.

Yes, my mother also used a mixture of lard and butter. I would think maybe add in the lard for a savoury pie and butter for a sweet one?

started to leave a comment and my computer lost it's mind, so dunno if there is a partial comment on here or not. I'm with you............water doesn't bring any flavor to the party!! But I also can't stand using unsalted butter. It tastes nasty. To control salt if a recipe calls for unsalted, I use salted butter and then put just a little less salt than the recipe calls for. I've done crusts with and without egg, and I like with egg better, but now I know WHY. I've been wanting blueberry pie for several weeks, and now I nearly clawed my way through the screen to get at that pie!! lol Looks delicious!!

There are metal pie pans with holes in them to help cook the crust fast so the fruit doesn’t make it soggy. You could even use your drill to make holes in the bottom of the pan. Drill from inside the pan. Restaurant supply stores have wonderful things.

The apple pie with this crust came out amazing so I decided to give it a go with the blueberry filling as well. The filling came out super runny , did not thickened out at all . I mean maybe I did something wrong but I followed the exact measurements. Also a video on cannoli chips recipe would be amazing.

Maybe the blueberries need to be drained a bit before adding the final cornstarch.

Some people use Knox gelatin to thicken blue berries. Others scoop out the berries and cook down the liquid till it’s very thick almost become a blob in a spoon. Then return the blueberries to the pan

🧡 blueberry, my mother made a blueberry dessert with Graham crackers crushed,butter ,sugar,pecan crust. Cream cheese,powder sugar, lemon juice, whipped cream with blueberry pie filling on top& that topped with whipped cream sprinkled with pecan bits every Thanksgiving. I will add your recipe to my recipe box, yes I'm old school. Thank you! Happy Thanksgiving!

I have used every kind of pie filling thickener available to us and I have found that raw tapioca pudding [about 2-3 tbsp] stirred into the filling, before cooking, is absolutely the best.... It adds flavor and thickens to perfection......enjoy.

Hi Kaye....look in any grocery store in the pudding and jello section. Its usually on the top shelf. It is a pudding, but raw in the box; just like all the others before you prepare them. You will love it in your pies; also imparts extra good flavor to your pie filling. I have been using it for over 40 years and wouldn't use anything else but that. Blessings and enjoy! Yes'Mam.....She knew what to do...heheheheh.....I grew up on Tapioca Pudding; mother fixed it all the time. I happened to notice the box one day and saw that you could use it to thicken pies. I tried it and have used nothing else since then. Hope you like it in your pies. Blessings. @@A10TOES

I always just used cornstarch but I 'll try the tapioca next. Especially in the blueberry. Thanks for the tip. "Joes" perfect pie crust is exactly what I do minus the egg. He s right.
