For us the process is simple...sorting, wash it in hot water, fry it crispy in cooking oil, add onions and tomatoes...it's ready to be eaten with garry or nsima in Zambia.

I prefer to cook the onion and tomatoes separately then finally add the crispy fried omena into that sauce +milk ...i noticed if I use your process, the water in the tomatoes dilutes the taste of the crispy omena and end result feels like boiled omena with sauce😅...try cooking sauce separately then combine with the fried fish towards the end and you'll see the difference💯👌🏾

I like the idea of removing the fishy smell by lemon,but for you to avoid omena from sticking on the frying pan,let the oil boil properly and allow omena to turn its colour from silver like to golden brown,this again will help them not break then you can add all those ingredients but all in all you are smart and hygienic with your food,I like the stew one

You need to have an experience especially with elderly people from the lake side. You'll almost abandon fish for omena. This days people are always in a hurry wanapika omena kama mayai. In 5mins ati omena imeiva then tena hajalalamika ati ni kali🤦♀️😂

Great video! I am however least bothered by the odour from Omena. I hail from ukambani and this is one of my favorite dishes. If someone has to think about the natural smell from fresh fish and cooked fish before they decide whether to eat it or not they are simply not cut out to enjoy this delicacy. If they decide to eat, they will have these weird reactions on their face when eating it and you can easily tell they are struggling.

For us from riverine and great lakes region Omena doesn't smell badly, so I suggest you say lemon 🍋 to remove the fishy 🐟 smell 😝

If you want tasty omena don't cook in water. Stick to wet fry especially for beginners. Lemons aren't necessary in cooking omena just boil a little or wash properly with hot water then rinse with cold. Let it drain all the water in a colander then deep fry or shallow fry as you wish so long as it turns golden brown. Add other ingredients and spices. I find it very tasty with coconut milk/cream, bizari and ghee.
The methods are good. Ukipenda ongeza hoho na pilipili kwa mbali.....ni tamu haswaaa!
