I’d be willing to bet most of us smokers started out with cheap, thin, leaky pits. You will look back one day and see this pit as the “one” that taught you how to: A) Manage fire, B) Manage time, C) Learn the characteristics of different woods, D) Wood/flavor profiles, E) …. You will also see the long-term value of the more expensive pits, and how much easier they are to operate. This smoker is the start of your offset journey, and I’m glad you’re sharing this and letting us all be a part of it.

And mines different?!? Like same size same offset. But the shelves and handles are red colored wood. It is a bitch and a half to build so I didn’t even get to see if she’s leaking. But this video is also 4 years old so I’m HOPING (fingers crossed) that they’ve improved on there inexpensive smoker. Monday is going to be my first cook so we shall see.

Update ok yea she leaks just as bad ahahaha im gonna do the mods you posted in the other video. But she cooks great ,temperature builds quick and as long as you dont open and close her a bunch she holds temp great. Very happy with my first cook on it. But she needs mods for sure

Happy Father's Day CJ!!! Great video on this Offset. You can definitely mod this up to make it work for you, just takes some time and experimentation but that's part of the fun. And the best part is, since it was inexpensive if in 3-6 months you decide this is not the grill for you at least you can say you got some experience with this style of cooking and you can just donate the grill to someone. Most excellent first, started, and entry level offset. I’m upgrading really soon. You may be able to use those fire box grates to even out the temps in the cooking chamber. You’ve seen my mods before. It really nice to see the smoke rolling at your House Brother. Thanks for sharing

I've been waiting for this one! Yep......don't you hate putting these things together.....always turns into a half day project. I think this will be a good pit to get your feet wet on trying to tame one of these beast! There are a lot of Mods and upgrade Vids out there for these kind of smokers that may help you. Sealing the cabinet is a good start for you because what you want and need is to have proper draw through the pit. It needs that airflow for it to burn the splits properly. Having thick metal really isn't necessary in a pit if you have good airflow. The next thing you need to think about is controlling temps by the amount of wood you are burning. When that log finally ignited for you......I can guarantee your temps went through the roof. Also before it ignited you probably had a ton of thick smoke. So what you need to do is add smaller splits more frequently. You need them to catch fire and burn clean as fast as possible.....or you are gonna have some barbecue that tastes like a house fire. I recommend watching my latest video on Fire Management. I guarantee it will help and give you the information you need. With the pit you have it's not gonna be easy.... but I believe you will know what to do when you do upgrade to something better. Hope this helps. Metal On! \m/

Heavy Metal Bar-B-Que yup yup....going to be a month or so and still tweaking some ideas. You know me....doing stuff that’s different. Might as well call me that “one-off” dude. I want this to be a versatile smoker. Wife wants me to consolidate down. And she is right. I will be letting go of one of my 1/4 inch Brinkmann smokers that Roger Davidson built. Don’t get me wrong because I love the 16 inch diameter units. BUT I have been selling BBQ out of my back yard the last two months. Utah allows this with a new enacted law to sell food out of a home without a Kermit. So this would be a stepping stone to a smoker trailer. But I want this to be a unit to use for multiple things. Running ideas by the builder. I just could not get what I wanted with the stuff from Texas. This will be a 800 plus pounder for sure.

I'm anxious to watch the mods video. I started on a very similar smoker (Brinkman). The two issues I always struggled with were leaks and ash management. Went through a lot of charcoal because of the leaks and then ash buildup would start smothering the remaining charcoal. Getting the ash out during a cook was a nightmare.

Happy Father’s Day CJ. How were the ribs? Yeah you can fix the leaks or you can just deal with it. It may not last that long. I had a cheap off set when I was young man back on in the nineties it didn’t make it three or four months. The fire box rusted through the bottom. That was my irresponsibility, I didn’t clean the ashes as I should, I let them sit in there between cooks. It did ok ribs and chickens but I really screwed up a brisket with it. My advise is clean the ashes every time, within first 24 hours after cook. Good luck with it.

NIce with a new toy. All offsets here are similar to yours, not seen any that are heavy duty like the ones i see in the BBQ guys videos. I now feel a bit encouraged to get one similar to yours. A roll of gasket should take care of a lot of the leakage :)

Hey CJ, I am a wanna be smoker gal! I just put together the same pit you have in this video. After watching you I bought the high temp. gasket on put it on the smoker door. The door is so light weight that it needs more help to eliminate smoke leaks. I am looking for some weights for the handle, but don't know where to begin. Any ideas? Lefty’s rule - glad to see a company that doesn’t discriminate against us Lefty’s. Nice starter offset. If it produces fire and smoke - you can cook in it. The leaks are not quite a big deal there I So Cal as your outdoor temp is pretty consistent- more of a annoyance for you than anything.

Hey CJ, I just got my first stick burner as well. There is a learning curve that I am starting to understand. I did some similar mods to mine and a few tweaks. Brother we can learn together. Smoking with wood splits is quite different than using Charcoal and wood chunks / chips! I can't wait to see your follow up videos on this subject! [Phil]

Did you put the charcoal and wood on the bottom of the offsetter and put the grate over them or on top of the grate? Also which position did you put the charcoal pan in the cooker? Highest, lowest or middle? I just got one of these and can't figure it out.

Matt Urban I took the grill grates out of the offset side and just burned the wood and charcoal in there. I had the charcoal pan on the lowest setting. I’ve also cooked on the charcoal pan in the cooker too. I’m still trying to get used to it myself. I’m going to do a couple mods on it soon and film it. Hopefully have it on here in a week or two.

Yes, I would, it’s why I bought it. I wanted to make sure I’d use and get the hang of using an offset grill before I put some cash into a bigger and better one. I also did a video for modifications on it, check it out if you buy this one. The mods really help.

Part 2. I did notice alot of leaks but i manage to keep the temperature at 225 to 250, i was up all night messing with it but even after 10 hours i wasn't able to get the bark color on it. What should i do ? Get a different smoker?

I used it as a drip pan and put some water in to keep more moisture in there.

Idk. I've looked at #2 a lot before this video and i kept seeing that they aren't sealed well and leaks a ton of smoke. It's tempting but don't want to fix something i just bought.

Just did a burn in with charcoal. Opened up the vent and stack. Took the temps to 350-400 for 30 min or so.

M. Bison I done a couple videos with it. On this channel. And on my bbq channel Cj’s Que. and the bricks help regulate the temps. Helps be more consistent.

OK ... THIS is what I like. Mod that thing! Anyone can sell a kidney and get a high dollar custom pit. Those are nice to see, but not many people have the room, budget, or understanding wife to get one.
