I really like how he explains why he is using certain ingredient and how they work within the recipe. Not a lot of cooking channels explain these things to the audience .

Both dishes looked mouth watering, but it boils down to savory verses sweet. I say Madeleine’s assessment was correct - have the Key Lime lobster for your appetizer and the Sweet & Sour for the entree.

Both dishes are looking great...I would favor the sweet n sour. The cornstarch is a must, we do a lot of crack conch and it's just not the same without the cornstarch. Bravo, great teamwork
