Whenever I make tonkatsu, I make extra so I can have katsudon the next day 🙂 I haven't seen that technique of cutting the pork before. I usually cut through the fat. It does keep it from curling, but then the pork has "toes" in the end, like a bear claw pastry. I'll try your technique next time.

@@tom_something It is stupid simple too. If you wanna make the same type of bread they apparently tend to use in Japan, it usually uses a pullman loaf pan..the kind with the lid. Someone on another cooking channel gave a hack for that though since those types of loaf pans cost up to 30+ USD. All you gotta do is use a clean sheet pan bottom and some weight on top so the rising bread doesn't lift it off...there ya go, simple and most people already have a sheet pan.

I made a cheat katsudon the other day with pre-cooked chicken schnitzel and it did not turn out so good😅meat was way overcooked once I simmered it with the sauce and egg. definitely going to try this method in the future! thank you chef!☺
