We do it a bit differently. My mom makes the callaloo with crab, parboiled rice, stew chicken, stewed red beans, macaroni pie and salad.

@@lenab1450 the cheese is enough to bind..but you can make a white sauce..bechamel..add the cheese then mix in the macaroni. You don't have to mix the 1st cheese in the hot macaroni..just mix into the sauce and then top off with the rest of cheese.

Ria I have learn an love your cooking styles for a long time but I must be honest don't use the word Traditional if things are not cook that way, yes I seen the writing why you use chicken foot and back but it was not voice, this is done your way even the Chicken.

We are all different and each household will have their own variation and a few ingredients were changed because of availability/personal preferences and I have noted why. Trinidad traditional callaloo has pigtail and crabs.Carrot is not a part of the dish,pumpkin is.Dasheen leaves are used to make callaloo.This is your version.Not traditional TT.
