Especially when there isn't so much a recipe as a "here's what I've been eating and how you can make it" kind of video. The "home cooking" type of videos from him and Kenji is definitely my speed. I love the deep dives, but one or two of these videos in between keeps things super interesting.

One of my favorite tricks I figured out is to use butter instead of oil. The tortilla will develop a really tasty "blackened" crust.

For those of us that pay for KZbin Premium we do not want to see your in video ads. Give us some form of count down or whatever. I'm paying to see your content without adds and if you keep doing it like this I'll just stop completely. It shouldn't be hard. Guga Foods does it none stop but he puts in a "sponsorship section" I can skip. I'm not doing both. I am literally paying an expense to not see adds so when you force them it's against what I'm paying for. You are very guilty for them without much escape.

I like this video, It a good addition for the 'deep dive' ones. You should always (or so) add this kind of videos with the more technical ones. Both ARE interesting in their own way. If your ingredients are already cooked, its a fun approach to show us what to do with leftovers in a creatives way.

I would be really interested in seeing a frozen vs fresh seafood test! Is there really such a big difference between when it's bought fresh from the store vs bought frozen right after fishing vs live & such? I imagine there is but I would like to see how big the difference is

If you’re buying from a regular grocery store, their “fresh” is usually previously frozen and it would mention that on the product! Just buying frozen is typically better I believe

This is so CRAZY - I literally JUST sat down for dinner after making my food, turn on this video, and realize, I MADE THE EXACT SAME THING TOTALLY by chance!!! I even put the premade chicken with salsa in the microwave!!! HOW WEIRD!!! Damn UFOs casting some chicken quesadilla airwaves in the air lol.

I've been making chicken quesadillas for breakfast almost every morning for months now. Absolutely delicious. I'm a bit more lazy though. I love spicy chicken thighs and the basic shredded mexican cheese you get in a bag. Then just mix gochujang sauce+mayo to dip it in. Really simple and basic, but tasty. I should probably add vegetables to it though.

Can anyone tell me 1). what type of press he is using to weigh down the quesadilla to get that crunchy exterior and 2). whether its worth buying something like that (or if anyone has a workaround/hack they use that can accomplish the same thing. Thx!

He is using the Chef's Press from someone named Bruce Hill. I don't have them, but if you think you'll use it a lot it could be worth it. For a hack, you can take any object with a decent amount of weight that can withstand some heat and put it on top. There's another cooking channel where they use a brick wrapped in aluminum foil. Or if it's not a particularly long cooking time like here you can just press down manually with a spatula.

Nice job. Quesadillas are simple and a great way to use up all sorts of leftovers. Gluten free tortilla options out there too. I go to brown rice tortillas, not because I'm gluten free, but because they are really crunchy, which I prefer. And cheese options are abundant too. Endless possibilities. Thanks for even more ideas.

I love your videos because they teach an amazing cooking background and teach the scientific knowledge that most home cooks lack. However, these videos are awesome. It is nice just to see the general thoughts.... especially after a long day of work. Seeing the real time cooking and keeping it quick and healthy is awesome!

I love those tortillas. We bought them by mistake and loved them for making tacos. They really don't do well for quesadillas because they get weird and rubbery on the pan.

Probably my most favourite cooking channel just because even though it brings science (which I love too) it has the chill weekend "freestyle" vibe which I love. Keep the good work. I'm experimenting when cooking myself because of channels like this and most of the time meals come out delicious

Ethan you're not kidding - this vid is home cook's style. forgot to take something out to defrost before work. omw home i grabbed some salmon filets. got home & just started grabbing stuff🤣 a sheet pan, threw some harissa, garlic & few others on the fish, grabbed bag of random frozen veggies & handful of finger potatoes, said a prayer then threw it in the oven 🤣 dinner is served! Like this style of vid & can't wait for the new chicken breast video.

I know you always cook chicken until it’s just barely white and that makes it more juicy, I just can’t do that chunky, frig salad, fake chicken feeling texture. I want it to be stringy and shred.

Awesome stuff, cannot wait for your chicken breast video TBH. Blackened chicken breast is a HUGE staple protein on The P:E Diet and my favorite thing to do is to heat up a well-seasoned cast iron skillet on medium while I pound flat a couple of chicken breasts and then completely dredge them in an absurd amount of 50% paprika and 50% onion powder [bought by the pound because I use so much of both] and throw them into the skillet for three minutes per side - this blackened chicken is a complete game-changer and can be added to literally any recipe you can think of. ☺︎ Anything teaching people how to eat and actually enjoy chicken breast is God’s work here in the midst of the obesity epidemic - I salute you 👊🏼

HI KIDS, DON'T USE YOUR CARBON STEEL PAN ON AN INDUCTION HOB unless you want it to warp and rock and spin around and be permanently stuck with massively uneven heating like Ethan's.

Carbon steel pans and induction burners can be a poor combination as the induction can heat up steel too concentrated and lead to warping.

I always pound out my chicken breast it vastly improves the flavor. I also love my indoor Ninja Foodi Grill. I add the tiniest bit of honey to really improve the blacking/grill marks on the chicken.

I thought it was unnecessary to add the skyr (which is different than yogurt people!) On the inside of the quesadilla...I've had FF Chobani as a sour cream substitute all the time...but inside? Tried it today because why not...holy forking shirtballs...why didn't I do this sooner?

"Takes 10 minutes, is high in protein, is overall delicious, and has a great textural contrast. Really, what's not to love?" Well for someone like me who's doing low-carb, borderline keto to reverse insulin resistance, 60 grams of protein compared to how much fat's in this is definitely an "oof". XD I do like how you just say it's high in protein without using "healthy" as shorthand for high-protein here, though. Too many people do that, I find, and it gets a bit exhausting for someone like me, who has other goals and other metabolic issues to work through. Echoing other folks here, love the 'behind the scenes' vibe, but additionally? I would NOT mind you just going *off* on things for an ultra-long video, because what you offer is both educational AND entertaining. maybe a one-off sometime?

Do you need picture’s of my family or some more cookbooks? You have 3 empty shelves behind you, and everything on the other 3 could fit on one. I like your channel but this has bugged me since day one. I’m sure H-E-B would provide seasonal decor if you reached out as an influencer. Again, love the content, but with the ornate background, you gotta fill it out.

Your videos are great. Content is compelling and informative. (Suggestion: Eliminate the word "like" from your narration. It is like so unnecessary, and like makes you sound like not so smart.)

Plugged all this into my calorie and macro calculator and it comes out at 646 calories. Not sure how you get it to 487? I used your recipe for it. Also that's even without the Tortilla Chips btw. Edit: I've found where the difference is. You are calculating from a low carb tortilla (people should know that normal tortillas aren't that low in calories) and your chicken breast only shows at 222 but its closer to 260 on mine. Also your written recipe calls for a regular flour Tortilla btw, no mention of low carb, so might want to edit that. I know this is pedantic but it actually does make a difference to people who are trying to stay below a certain amount of calories to lose weight. I'm more leaving this here so people don't get tricked into thinking that they are eating less calories than they really are.

Ethan I hate to break it to you but your tortilla Macros are lying to you lol. According to the macro numbers, it’s closer to around 89 calories per tortilla. Since you’re also a detail freak like I am, most the times the packing lies about how much each tortilla weighs. I’ve bought tortillas that say 60 g each on the packaging and then physically weighed it and or was like 75-80. Lots of lying on those labels lol

The calories on the wrap are way off, not that it really matters. Even if you take their macros as valid, ((16+4) x 4) + 9) = 89kcal

Looks great, my only disappointment is hearing you are spending a ton on time on chicken breasts as opposed to thighs, which are tastier and cheaper and much harder to f'up. Eh, oh well, I'm sure I'll be able to make the results work on thighs (I get them by the 40 lb case at the local commercial supplier).
