Shaun Palmer's Pro Snowboarder is fantastic, if you like Tony Hawk-style controls (I know many people don't like them. Alpine Racer 3 is a fun arcade-style racing game with snowboards/ski.

Oh dude it was great. Everybody talks about SSX Tricky, but this game to me was way better. I played a ton of it. Career mode was fun and very challenging as you went

The riders are stiff as a board, I thought PS2 had analog controls, what a waste of the most important example of leaning side to side smoothly, JUST LIKE REAL SNOWBOARDING! Its almost hard to watch and I spent hours on this game!
