I'm a cast iron fanatic. I make flat breads on the stove top, even did steamed buns but never tried this method for a loaf of bread. I would be flipping the bread over inside the Dutch oven bc it would be easier for an old lady like me. I know one day I'll have to give up my heavier pieces of cast iron but I still think it's the best long lasting cookware and am thrilled to see it make a comeback. For me it never went away, I have 22 pieces of it collected over 43 yrs and my oldest piece is over 100 yrs old.You only buy it once.:o)

100 year old pot is definitely a keeper, cast iron pots are made to be passed on to the generations. Flat breads are great freshly baked with butter and cheese. :)

I loved reading your message. I too am a cast iron lover. I wish we could communicate with each other. I would love get to get some old school recipes. My mom died when I was in my early twenties and I didn't get much of her training. God bless you and I hope you can continue to cook with your favorite cast iron cookware..

I never bake in an oven. I always use this method. I don't need a cast iron skillet, I just put the Dutch oven straight on the fire and a small round rack under the bread to lift it up a little bit.

I get a nice crust on the bottom of a sourdough loaf with my smallest gas flame on full, with two steel disks (24 cm and 26 cm) stacked as diffusers, a cake tin skirt around, then three stand-off pieces of terracotta (8 mm) under the cast iron pot, with an inverted jam pan over the whole lot to conserve the heat as much as possible. Sounds more complex than it is. 50 min on full, flip the loaf upside down to brown the top 10 min. Uses a lot less gas than the oven. The pot is my normal cooking pot, old and well-seasoned, with a good fitting top, just needs a light rubbing with a touch of olive oil after the bake to keep the surface good. The loaves never stick.

Glad you enjoyed it :). I prefer home made bread over the soft loaves you get in the grocery, we store pots and pans in the oven so this method is easier to make a loaf. No need to empty oven LoL. The soundtrack is quite nice and I thought it was appropriate. If you ever try this method let me know how it turns out.

It will be a while before I can afford to connect my oven. So, I'm going to be happy in the meantime with the induction stove with Dutch oven and other cast iron I have to make bread, pizza and more. Thanks so much for sharing!

Cowboy style... Certainly bread used to be cooked on the cattle drives, in cast iron, by the cowboys. I'll bet, they just put the cast iron right down in the coals. Maybe with a cast trivet in the bottom. I remember having something like that. Heating up the pot before putting the dough into it might be good. Thanks for the video and the great ideas.

I like to use melted butter, instead of olive oil.I also punch the dough down and then kneed it again. I believe you get more Air into the Bread. Your way is Great as well though. GREAT VIDEO!

When I do dutch oven bread I heat the lid on a burner and place it on top to brown and cook evenly without flipping the bread over.

It is the best way to heat the lid when you can not put coals on top the pot. Both methods can be a little dangerous though. Cheers

well it works! I will have to tweak the recipe some. I learned the jalapenos should be added after the bread is mixed in the food processor, otherwise it is so well Incorporated one cannot tell they are in the bread or really taste them. The best thing is I learned a new thing & another way

Hi, great video, but I was wondering if the empty skillet over the fire is affected in its seasoning in any way. Was thinking about using the empty pot method to bake using a dutch oven on the stovetop with a rack inside to put the cake pan on it, but I am afraid using the dutch oven over a burner without anything on the bottom, except maybe a layer of salt or sand , could ruin the seasoning because of overheating.

one other thing, once I got the bread out, I flipped it over back into the Dutch oven, which was still quite hot enough, & browned the top of the bread. Before baking the bread I put in a metal trivet in the bottom & parchment paper to make sure the bread didn't burn & to make getting the bread out easier. I also put a paper towel between the bread & the lid to keep the moisture off the top of the bread. that's a trick I learned when baking bread in a crock pot.

I never thought of putting paper towels to absorb the moisture that's an idea. When you placed the trivet and then the bread was it in a second pan. If so you may be able to apply a hotter flame. Its the best taste and much more fulfilling than commercial supermarket bread. The only bad is by the time it cools half of the loaf is gone down the hatch with melted butter. LOL.

I know! I love hot bread with butter right out of the oven. I have experimented in the kitchen most of my life. I am not the best cook.... which is why I say experimented. I get bored with the same food day after day. :-). Now I will try rolls in the electric skillet. My grandmother's recipe. Made with potato water. Smells delicious & tastes good with butter.

The trivet first, then the parchment paper, then the bread, then paper towel & last the lid. I do believe I could have used a hotter flame. Will be doing this again. My loaf came out looking pretty much just like yours. Same height, same diameter, same color. We had a small amount left so my friend made croutons for salad....they were Yum.

It depends whether you will be monitoring the loaf after turning the loaf over. You can put the Dutch on direct flame since we only want a little color on both sides. Just stick around until the loaf smells toasty. Unless you like heavily toasted bread. :)

This is a genious idea, two questions though, wouldnt using a pan under the pot directly on the flame burn the pan, and there will be risk of fire? Second question, the music is fantastic! What is it?

I used another cast iron pot and the flame is pretty low. Any time you are dealing with fire you should stick around. As with the music not sure what genre it is, but it was relaxing that's why I chose it. Take care.

That's the beauty of cast iron, it won't burn. Just beware that one of my cast iron skillets was made in China and it cracked from the heat. That never happens with my Lodge cast irons.

+Anthony Sometimes I will add some kind of oil to the mixture. Almost any breath recipe works. The key is to have a low slow heat source. Thanks for watching. Let me know if you can improve the methods.

+Dorian Yeager Good question Dorian. That's the reason I use a very low fire. I am not a cast iron expert but I have done it many times and the pot is still good. I usually oil it to season the surface as the bread bakes. You can use a trivet since the objective is to separate the bottom of the Dutch oven a sufficient distance to avoid burning the bread, but then you would need a higher flame to transfer the heat and that wouldn't be efficient just wasting fuel. I am sure there are many ways to do this. If you find a better way let me know. Peter

Interesting... I would have thought the skillet would need some water in though - to stop it warping? And can't you just use greaseproof paper inside the dutch oven to prevent sticking??

The fire is really low. To be honest I am not sure if it would warp the pot. Maybe you can use an old pot. You can use the grease proof paper. I kinda like the lightly over cooked/burnt pieces. It adds flavour ;)
