Thank for this list of options. I found with my Office 2007 that Word 2007 does not convert PDF upon importing, but OneNote 2007 approach was successful. Powertoys' Text extractor seemed simpliest approach - thank you.

Glad you found the information useful! Support for Office 2007 ended in 2017 so its feature set is somewhat outdated. If for whatever reason you can't upgrade to a newer version, you could give LibreOffice a try? While it doesn't have all the features of the latest MS365 it's free, updated regularly, and can be installed alongside office on your PC! www.libreoffice.org/
