My mamaws famous BLT sandwich recipe!

Hearing you talking about the chickens roosting at night reminded me of a funny story from my childhood. When I was little, we lived with my grandparents. My grandma (Nanny) had chickens, which I fed daily. I never realized Nanny butchered our chickens until years later. I was never around when she butchered them. When I noticed the chicken population declining, I asked where the chickens were. She told me they were "roosting in the trees." Then soon after, peeps would arrive. The excitement of seeing the tiny, yellow puff balls made me forget all about the roosting chickens, which became our roasting chickens! 😂

You ever toast your bread before making BLT’s? Yum! Good for tuna salad too. Keeps the bread from getting soggy and gives it a little extra crunch. Cooking bacon in the oven is great. Gets more done at once in a shorter time and you don’t get grease splattered all over. Yes Corey, a diagonally cut sandwich always tastes better. 😋 I don’t know why. It also gives good eye appeal. 😄

Did you ever fix bacon in the oven? You use a large sheet pan. Line the pan with parchment paper. Put your whole package of bacon on the paper in single slices Bake at 400 degrees for 15 to 20 minutes depending on how crispy you like it. It’s so easy Let me know what you think 😊

I'm just adding to the comments about cooking bacon in the oven. I do that also but I use aluminum foil. If you use parchment, be sure it isn't sticking over because if it gets close to the elements, the parchment can catch fire. It has happened to me.

I always lay my bacon flat on a cookie rack ,then place it in a flat pan and bake it in the oven ,this way the bacon is crispy and it’s not cooking in all that grease ,just a healthier way of eating bacon .And my tomatoes after slicing them I lay them on paper towels this way they don’t make the bread as soggy ,

Many years ago my husband was stationed as part of a very small American liaison group at British military base in Germany. The NAAFI always had the most interesting flavors of crisps compared to American chips at the time. We may have caught up in variety over the decades, but I don't think I've seen a cheese-onion combo yet😋 And funny, but all our UK friends preferred coffee to tea. I'm from the northwest part of the States and grew up with hot tea with milk and sugar, which I drink almost daily with breakfast .

Since we love BLT’S, sometimes I’ll use 3 slices of bread but I always toast the bread first, and then I add mayo, Hard Boiled Eggs, Bacon, add 2nd slice of bread, add mayo and American Cheese , then add tomato, lettuce and onions and Mayo to the 3rd slice of bread! My father used to get squirrel and mother would cook the meat. When I was a baby, sitting in the high chair I would fall asleep chewing on a squirrel leg, I hear. My precious mother talked about having chocolate gravy when she was a little girl. She was from Oklahoma. I find Southern cooks EXCELLENT cooks. My whole family, mama, gramma, aunts AND uncles are/were. I don’t remember my grampa cooking. BUT, I remember him drinking his coffee,(which was HALF cream), out of a “mustache cup”…he let me drink it with him…of course it had a lot of sugar in it, too❣️ I sat on Grampa’s lap and ate. We had a BIG round, wooden table. They had a farm❣️ Eggs, milk, chicken, eggs, homemade “light bread”, made with yeast. We had veggies… I as a toddler loved spinach with a touch of vinegar. Grandpa would pick up his green peas, one at a time, with a table knife and eat them that way. SO MANY GOOD MEMORIES there in Oklahoma.

Thanks Mamaw and Corey I love a BLT sandwich. I say by putting the lettuce first then the bacon before it completly cools will let a little of the bacon grease get on your lettuce and add more flavor to the lettuce. Or you could maybe fry your lettuce for a second in the bacon grease.
