Cornish Pasties
1 pound beef round or chuck, minced
2 cups diced, pared potatoes
1 1/2 cups chopped onion
1 tablespoon Worcestershire sauce
2 teaspoons salt
1/8 teaspoon black pepper
1 egg, beaten
Combine all the ingredients and blend well.
Divide dough into 6 equal pieces. Roll each one into a 7-inch circle. Fill the bottom half of the circle with the mixture. Fold the other half of each circle over the mixture. Press edges together to seal, using the tines of a fork. Cut slits on the top of each. Place on ungreased baking sheets and brush with beaten egg. Bake in a 350-degree oven for 45 minutes or until the crust is golden brown. Makes 6 servings.
Cornish Pastry:
Combine 3 cups sifted flour and 1 1/2 teaspoon salt in a bowl. Cut in 1 cup lard (or 10 tablespoons vegetable shortening) until coarse crumbs form, using a pastry blender. Sprinkle 4-5 tablespoons iced water over crumb mixture, a little at a time, tossing with a fork until dough forms. Press dough firmly into a ball.
