Depression I have post traumatic stress after being in law enforcement all my working life now on aged pension with Major spine conditions neck and lower back waiting for another spine fussion can’t sleep much because of pain. Dear Chef Jack, i very rarely comment on videos but this time i think it´s neccessary. I moved out of my parents house last year to go to med school after working in EMS for some time. I´ve never really learned to cook anything before so now that i´m on my own i looked for quick an easy to make recepies. That is when i found your channel, now over the time many of your recepies are my comfort food. Especially during times when i can´t handle the stress that univerity causes sometimes i pick out one your dishes to cook myself. It really works wonders to take my mind of all the tolls that university takes. Just know that you're bringing a lot of joy to a lot of people's lives by sharing your wisdom with us. You've helped me out a lot and several of your recipes are now staples. Funnily enough I always loved it when my mum cooked cottage pie at home and would have more than a normal amount of servings, haha. For me, I like to put a small layer of mash on the bottom of the dish then bake that for 5 mins before loading the rest of the ingredients. It soaks up the gravy and makes plating so much more solid.

I use parsnips and white cheddar added into my mashed potatoes to top the meat & veg part with. A wonderful British Lady at my church used to make Cottage Pie for out church luncheons. Happy you got help with your problems. Actually realizing you have one and then ACCEPTING help with it is probably the most difficult part of it. Bravo to you and your KZbin channel for bringing joy and happiness to millions of people!❤

Absolutely beautiful cottage pie Chef, I'm 54 on Monday, and the thing my mum would make is shepherds pie, but she would use leftover roast lamb, it's a childhood memory that has stayed with me all these years, and either shepherds or cottage pie is sensational, and I to have suffered depression, I am happy to say I am on medication for it, mental health is so important, love your videos Chef Jack

Dear Chef Jack: I just made this Cottage Pie today. One bite just for taste before divvying it up between family members. Delicious. One side note, on the recipe printed out you have rosemary, but in your video, you only used parsley and thyme. I followed your video. I'm sure rosemary would have been okay, but I didn't want to chance it. Thank you much too for being so brave in creating these videos. Superb. You're a natural. 15+ yrs ago I would make cottage pie quite often. Then I moved and lost track of the cookbook I cooked from and stopped making it because I never quite committed the recipe to memory. Recently I found that cookbook again and your recipe is very similar to the recipe in that book. I'm anxious to make it again.

Naming conventions and ingredients aside, I am sure if you were to get a few home cooks together, you would have as many 'definitive recipes'. I have once seen a recipe for London Pie in an older book, but the only difference I can remember from a variation of Cottage pie was the addition of tomato purée. I suspect that particular naming may have dropped out of use. To prevent as much side leakage, I start adding the topping from the sides, scraping spoonfuls of mash aginst the dish to get a tight seal. I then fill up the centre. Because I prefer a little more 'gravy' in my meat mix, I find that allowing it to cool (preferably overnight in the fridge which also seems to help the flavour) is necessary if you want to keep a strong demarcation between the layers. I will sometimes add a little nutmeg to the mash, and will make a drier mash than in the video, but I am not saying one way is right, it is just a personal preference - I am not a particular fan of super smooth mash which reminds me too much of some of the sloppy instant I have been presented with over the years when eating out, although I would certainly consider a potato ricer as one of my core kitchen equipment items. Which, leaves us with the final question, is it right or wrong to add grated cheese on top, and if it is, what type(s) and how much?

Did a Cottage Pie recently, using whatever was in store at my folks' place after my Mum ended up in hospital, and I got promoted to chef for my father. I used garlic, onion, celery & carrot, but finely chopped & sweated in a separate pan from that used to brown the mince. Added the veg once the meat had browned. Didn't have red wine, so used a splash of sherry & vermouth (Martini). Beef & veg stock (cubes) plus Worcester and a bit of Tobasco, all mixed in a little hot water. Sprinkled some gravy granules over the meat/veg mix to make a bit of gravy in the mix. Obviously, salt & ground black pepper to season. Bit of finely grated mature cheddar on top of the buttery mash potatoes gives a nice golden crust on the top of the pie too. - there's more than one way to make a tasty cottage pie, but there's no right or wrong way. Yours looks lovely.
