COUNTRY BREAKFAST & TEXAS LASAGNA | SOUTHERN LIVING AND COOKING!

Hey family!!! In today's video we're starting out with some Country Ham Biscuits, I do some cleaning, a special guest arrives, Titus and Jacob give a horse shoeing demonstration at a school, and we make a Texas Lasagna for supper!
Texas Lasagna Recipe:
Ingredients:
2 pounds ground beef
1 onion, chopped
2 cups salsa
1 packet taco seasoning
1 15 oz can diced tomatoes
1 4oz can diced green chiles
2 15 oz containers ricotta cheese
2 eggs
16 oz shredded cheese, I used Colby Jack and Pepper Jack
white corn tortillas, around 10
Directions:
Cook ground beef with onion until beef is done, drain. Add salsa, taco seasoning, dieced tomatoes, and green chiles. In a bowl mix together the ricotta cheese and two eggs. Spray a 9X13 casserole dish. Layer the meat mixture, tortillas, ricotta mixture, and shredded cheese. Bake at 350 for 30 minutes.
Serve with toppings and tortilla chips!
Buttermilk Biscuit Recipe:
2 cups self rising flour
6 TB unsalted butter (cold)
1 cup buttermilk
Directions:
Preheat oven to 350°
Combine all ingredients and mix by hand, using a little self rising flour to keep it from sticking to your hands too much. Pinch of pieces a little bigger than a golf ball and roll into ball shape. Pat in extra flour and press slightly onto baking pan.
Bake in preheated oven for 10-15 minutes, until bottoms of biscuits are browned. Brown the tops and spread with butter!

My mom and grandmother would start washing clothes at 4am all day in Saturday. My parents had 9 of us kids on the weekends would be home cleaning for all 4 girls when my dad and 5 brothers would go work outside and on cars and on the house..

My Mom always used her electric percolator coffee maker.. she loved it and finally gave in when Dad bought her a Mr. Coffee. She always said it didn't male as good of coffee as her and not near as hot.

Texas lasagna looks delicious !! Also loved your creamy, dreamy coconut cake. Going to try for Easter dessert . Love that coconut milk and cream are used in whipped cream topping. Have some family that don’t care for coconut flake texture but like the flavor. If they don’t like, more goodness for those who do. We have a lamb that makes an appearance every Easter in our family also. It even appeared for the grandchildren, now appearing for our great granddaughter who will be 1 next month. My dad would homeschool all year round. My dad was a Mennonite and my grandparents was mennonite they homeschool my dad and aunts and uncles all year round. The only days we had off was Easter,Thanksgiving,Christmas only. I been doing two birthdays cakes and pies and homemade Easter candy for my husband and kids. How I am doing four loaf homemade breads and dinner rolls and three hams and more for Easter dinner Sunday.,

You just can’t beat country ham and biscuits. I live in TX but have loads of relatives in TN and KY and that country ham just “takes me home”. Gonna have to try that Texas Lasagna. I have a recipe for regular lasagna where you use pinches of cream cheese instead of ricotta cheese. I may use that in this recipe and see how it tastes. BLESSINGS!!!
