I fixed this hearty dinner on Sunday. It was too delicious not to share, so I fixed it again on Monday, and filmed the meal's 3 recipes for you! Ingredients and oven-time for the meatloaf are listed below:
My Favorite Meatloaf
Ingredients for one 9x5 loaf, or about 8 servings
2 - 2 1/2 lbs lean ground beef (I used 93% lean)
1 1/2 cups plain Panko bread crumbs (gluten-free panko is fine)
1/2 cup barbecue sauce
3 large carrots, grated (or pulverized in a food processor)
1 medium onion, grated (or pulverized in a food processor)
2 large eggs
1 teaspoon garlic powder
1/2 cup grated Parmesan cheese (I forgot to add this in the video; so sorry)
1/4 cup minced parsley (fresh or dried)
3/4 teaspoon salt
Mix all of the above ingredients in a large bowl, and then transfer to a 9x5 loaf pan and pack well.
Spread the top with 6 ounces of plain tomato paste and -- if you wish -- 3 slices of bacon.
Bake at 350°F until the center of the loaf registers 160°F when tested with a digital thermometer -- about 75 minutes. Tilt the pan to drain off excess fat, and then let rest for 20 minutes before slicing. Leftover meatloaf is marvelous for sandwiches!
