I certainly understand your frustration with cooking on the road. The small area, using only 1 pot at a time, limited water, and the time crutch brings me anxiety, especially being super busy. I'm trying to carve out time, relax more and cook with love, rather than a rushed chore. It's worth it, especially when he's working so hard and you enjoy the meal together. You are a lucky man you found a trucker wife. I think the hardest think when your a trucker is when yo have a spouse that's not in or interested in the industry and isn't willing to understand the in's and out's of it all. Trucking can be an a great opportunity. It's one of the jobs in which you need no shelter or car. Two of your biggest liabilities. Use that money to buy assets like investment real estate. You could house hack. Definitely start your IRA Roth accounts as well and max them out. All you have to do is buy low s and p index funds with that IRA Roth. Start an vending machine business. Buy and existing business that cash flows. Do it while you two are still young, Good luck.
