I came across this video, loved the short and easy (for those who know how to cook) instruction and then went to your channel for more. Sad to see the last post is two years old, but I am grateful for what you shared. Thank you!

Best cow heel soup recipe, from the washing and the pre-cooking of the cow heel, to the finished product. I also add a pinch of sugar to my soup.

Hey, you discarded the collagen and nutrients when you strained and rinsed the cow heel!

Apparently locals do not consider the collagen edible, when its the most beneficial part

@@sealifett8395 not true, I am a trini I don't discard that part. It's added flavour and nutrients. Not all of us in Trinidad cook it this way, but to each his own preference.

Looks great! You really can't trim the fat from the heel. When the soup is done allow to rest 4 minutes, take a clean absorbent paper towel napkin the size of pot and gently cover the liquid in the pot. leave for 15 seconds, then remove and discard. You can repeat if needed. The flavor is always in the fat

Just to make sure I understand, the first time you cook the heel in the pressure cooker, that liquid/broth is not kept, and is discarded? Or that first boil/pressure cooks liquid is kept? It would seem that it has a lot of flavor and would be worth keeping.
