Apparently locals do not consider the collagen edible,when its the most beneficial part

@@sealifett8395 not true, I am a trini I don't discard that part. It's added flavour and nutrients. Not all of us in Trinidad cook it this way, but to each his own preference.

Good day Lynn just want to let you know there were 3 versions of cow heel soup in past 2 days i totally loved yours.Only thing missing was dumplings no biggee .Keep up the good work.

Indeed there are many ways of doing it. Glad that mines stood out for you. I'll be doing a dumplings recipe in the future so i didnt include it

Looks great! You really can't trim the fat from the heel. When the soup is done allow to rest 4 minutes, take a clean absorbent paper towel napkin the size of pot and gently cover the liquid in the pot. leave for 15 seconds, then remove and discard. You can repeat if needed. The flavor is always in the fat

Just to make sure I understand, the first time you cook the heel in the pressure cooker, that liquid/broth is not kept, and is discarded? Or that first boil/pressure cooks liquid is kept? It would seem that it has a lot of flavor and would be worth keeping.

you rinsed away all best and healthiest part of cows leg - its fat and collagen, come on thats a crime
