Im an old Southern fella and when a watch Kent, Shannon and the four-legged people, it just takes me home to a time when Mom had the most wonderful smells in our kitchen . The old wood- farred Queen Ann was cherry red and all us kids done with chores and washed up. Dad would come in and it was Sunday or Saturday in the South. Found it with this one. Interior space cavity was large, but the outside was smaller than my old one. I love the one-button push for 1-6 minutes, and the 30 second add or 30 second start. and MOST IMPORTANTLY, I love how you can adjust the power level during cooking. The reviews said it could not be done, but this marked all the other boxes. and happy to say, it does. I can hit 1 minute start, and change the power level from 10 to 5, 30 seconds in, without interruption. my favorite feature!

@@lilblackduc7312 you can use really any acid. So what I would do is increase the lemon juice and mix with chicken stock. It won’t be the same but it would still be delicious. Wines work as an acid in the food which is a flavor enhancer. You can get that from lemon juice and then the chicken stock would create essentially a pan gravy. Congrats on being sober, and never think a dish is out of your reach because you avoid the booze! Enjoy cooking and god bless.

I'm going to try this recipe with Cornish Hens. I'm just cooking for myself. A little trick if you don't have twine or fencing wire is to cut a slit on each side between the thigh and butt flap. then tuck each leg into the opposite side slit. It also helps hold the butt flap up.

I learned back in the service on KP washing dishes that the water needed to be 140° to kill bacteria. ( had to use two pair of gloves.) I really don't worry about things that are cooking (except chicken) if it is going to reach an internal temp of 140° or more. Here in West Texas there is always dirt or sand in the air, so stir. "Marry an an enlisted man: they know how to cook, clean and take orders". 🤠

We rinse our chickens, but, we also help the neighbor butcher the birds and he recommends that we do rinse them before cooking. My question is, what is a 5 lb chicken? The last 2 small chickens we bought came in at 10lbs dressed. We also got a couple of large chickens that weighed 13 lbs dressed.

I always wrench my chicken, I clean my sink good before I mess with chicken, then I scrub and sanitize Everything afterwards. And if I had dropped the roasted chicken while cooking, I would have wrenched it off again and put it back in the pot. Good job Kent.

It's amazing how easy it is to get a small piece of wire in a pasture. Pro tip, look along any fence line or old equipment pile. That chicken looks fantastic. I have to try a baked chicken this weekend. I got a new Lodge oven for Christmas and this recipe is calling my name.

The whole chicken is my favorite chicken to cook. I've spent a fair amount of time in Colombia and Ecuador and you can't really buy chicken pieces down there, the chicken is usually sold whole.
