Your comments on bay leaves brought back memories of my childhood. My mother was an excellent cook, but she also had a sense of humor. When she would make spaghetti sauce (marinara), she would always leave one bay leaf buried in the sauce. Whoever got the bay leaf in their scoop of sauce had to do the dishes after dinner. Somehow my mom and dad never got that leaf. It was always one of us kids.

I grew up on a small family farm here in Ohio, and remember coming home after school, coming in the side door which was the kitchen door. You could immediately smell the aroma of what mama was cooking for supper. Her pot roast was my favorite. To this day, my brother and sisters are scattered all over the country, and we all still cook her beloved pot roast. We’re all in our 60’s now, but our kids and grandkids have come to love moms roast. I miss my parents, think of them almost daily at some point. One day we will all be reunited at Christ’s bounty….what a day that will be. May Christ Jesus dwell in each of you who read this. You know what? Come to think of it, my Grammaw's roast beef was what I remember her making the most. She was born in 1887. Lived to 98 years old. My request for my birthday supper was my mom's chicken and dumplings. We raised our own chickens. Sure miss those days. Big family. Duncan Oklahoma. c1960s.

A friend has a daily thoughts he send out, and in it he cited the old song "His Eye Is On The Sparrow", which I have loved all my life. Then, my wife said we need a recipe for a roast to cook when we go camping next week. And here you were saving the day. I hope mine turns out just as good, though it will be my first cook in my new dutch oven. At my mom's house around 60 years ago, pot roast was a Sunday thing, too. A cozy meal, everybody talking and laughing, a sense of peace and love. Just great for warding off winter's chill. Bay leaves are generally not eaten because they can break and have sharp edges that can do bad things in the digestive tract. But you can blitz them into a powder and eat them just fine -- I use that for my garam masala blend all the time.

Thanks for that. My Mom, now 90 is still 'rousting-about' and as a knee-high I looked over many a pot, skillet and baking pan and never knew I was learning something. Now in my 67th I cook almost everyday, sometime full meals and sometimes prep for meals. 'Got me' a dutch oven (or two) and will give the pot roast a go. Cheers, Mark

Kent and Shannon, my momma also had a pot roast she did every Sunday. I inherited her large Magnalite roasting pan that she would slow roast all day in the oven. Then on Monday she would take the leftovers (her roasts were 8 to 10 pounders) add a few more veggies and cook it down to make the best hash you ever put in your mouth. Ummm. Since the summer of 2020, we (my family and myself) have lost SO MANY CLOSE FRIENDS AND FAMILY that sometimes, it just seems like the world is crumbling below our feet. Hang in there and make sure you remember to: H.A.L.T.!!, which means, while you are healing, never allow yourself to get too Hungry Angry Lonely or Tired. Take care of you and lean on family and friends.

It took you long enough I know I asked you I think 3 years ago. But does it ever bring back memories my mom made the best roast beef and then she would cook the juices down and add a little corn starch in and it would become the best brown gravy in the world. It went great on top of those boiled red potatoes as those are the only type dad would allow in the house.

I took my new love to meet my grandparents in east Texas and show her East Texas cooking. I’m the heir to mawmaw cooking. I had the privilege to take my new love to introduce her to East Texas cooking. Let’s just say my girl who grew up in the southwest across the border the land that has flavor beyond taken back by our pure method of cooking. Thank you for the blessing at the end of that pot roast tutorial. I might disagree with you on several aspects to make an Austonio pot roast but you did good my man you did really damn good.

Food is definitely about creating memories and sharing with others. I also like using a base of onion, as well as carrot and celery, on my pot roast. It's also a good support for the roast, and it adds extra flavour. That pot roast looks great. My mother makes a pot roast very similar to this, and every next day I would make a sandwich out of the left overs on ciabatta bread for everybody. This video is really great timing cause I'm having one of those sandwiches as I type this.

Wonderful video as always Kent, I'll never get tired of watching you work your magic. I'm pretty sure the reason we use whole bay leaves, and fish them out at the end, is that they don't really soften very much as they cook, and unless you grind them up into a really fine powder, they're very unpleasant to bite on, and can even be a choking hazard if you accidentally swallow a big piece. Anyways, God bless you, Shan and the family, and if you ever find yourself in the land down under, I'd love to buy you a beer somewhere.
