Apple Cider Viniagrette:

Apple Dumplings:
Non-Sourdough Crust:
3 medium apples
2 cups flour
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cup butter
1/2 cup milk
Sourdough Crust:

For the Sauce:
2 cups maple syrup
2 cups water
1/4 cup butter
1/2 tsp cinnamon
1 tsp vanilla
Pare and core apples, cut in half. For sourdough crust, follow instructions in the link. For traditional dough, mix flour, baking powder, and salt together. Grate in butter. Sprinkle milk over mixture and press together lightly.
To Assemble:
Roll dough to about 1/2 in thickness, cut into 6 squares and place an apple half on each. Sprinkle with cinnamon and sugar. Pat dough around apple to cover it completely. Fasten edges securely on top of apple. Place dumplings in a greased baking pan. Pour over them the sauce as follows:
Combine maple syrup, cinnamon, and water. Let it start boiling and continue boiling for 5 mins. Remove from heat and add the butter and vanilla.
Bake at 375 for 35-40 mins. Best served warm!
Sweet Potato Fries:
Peel potatoes and cut into fries. Place in bowl of cold water and about 1/2 cup salt. Cool in fridge for 2 hours to pull out starches. Drain, and fry at 225 for around 8 mins. Set aside to drip dry. Fry again (this time at 425) just till golden. Season to taste!
Homemade Burger Patties:
2 lbs ground beef
2 eggs
1/2 cup milk
1/4 cup ketchup
1 cup bread (or cracker) crumbs
salt, to taste
Mix all together and shape into patties. Grill and Enjoy!
Sourdough Hamburger Rolls (I use this recipe, but divide into 8-10 rolls so that they're bigger. Once ready to bake, I baste with an egg wash and sprinkle with coarse salt):

For us, fall is soup season along with 1 pot or pan meals. Our favorite right now is Italian sausage/artichoke/spinach soup with cheese crisps (made with cheddar, mozzarella and Parmesan cheeses), next favorite soups in order are potato soup w/ham, 11 bean soup w/smoked ham hocks, vegetable beef then we move into stews- beef with drop biscuits, chicken w/dumplings, chili w/cornbread muffins. At least once a week through Spring, we have at least one of those meals, usually on Saturday or Sunday.

I loved this! You are so inspiring! I enjoy butternut squash roasted, sautéed Italian sausage, noodles with parmesan and some cream - very delicious. Your apple dumplings looked so pretty and delicious. Our sons are coming over this weekend to help move cattle to another pasture across the road - I usually make up a meal for them afterwards…there are so many fun ideas here- I am thinking the cornbread waffle chilli dish! We used to grow Tahitian Squash (the name of your squash), super sweet, long neck of fruit with no seeds until you reach the bulb at the bottom , one of the best!!!

That dessert seems so yummy! I will have to try it out sometime:) I wonder if a puff pastry danish would be good with the apple butter you made in the last video and a cream cheese type filling as a fall-style treat? @@thisgoldenhourI don’t really follow a recipe but I do use beef or chicken stock and a whole handful of chili powder! And sometimes I use ground beef combined with stew beef.

My daughter has been putting puréed pumpkin in her chili for years and it boosts the nutrition and you can’t taste it. I believe she still uses the tomatoes or tomato sauce as well.

Your food looks so beautiful! I’m always curious to know if the children eat the fancy meals or do you change anything about it for them.
